Tonight will be leftover Chinese takeout-dinner for one easily becomes dinner for two.
Our air fried wontons turned out even better this time.

Now hold on a cotton pickin minute there @crafter We have an air-fryer and not once did I ever consider doing won tons in it. This seems so easy? I will consult You Tube for the how-to's of it all. Gorgeous photo of those crispy items!
Mom is making more of her Homemade Copycat Sweet Baby Ray BBQ Sauce so she is having wings for dinner. We are out of Salad so instead of my standard BBQ Chicken Caesar Wrap, I will be having a BBQ Chicken Breast. We will both have Roasted Potatoes & I am thinking Roasted Brussel Sprouts although the veggie might change.

We skipped the shrimp and used Johnsonville mild italian ground. The easiest way to make them is by wetting the edges of the wonton wrapper with your finger tip... add the filling fold over in a triangle and press both sides down (no need to get fancy). brush with canola oil on either side and flip halfway through. We only have a small air fryer so we made 4 at a time.. we passed the time listening to music sipping on wine.
With these temps a nice pot of chili is in order. Leftover cheese bread for a side.
Just made a pot of homemade cheesy cauliflower soup.
Well I changed my mind at the last minute and made porcupine meatballs. The kids used to love them growing up. I tried this recipe (halved). The only difference was adding an egg. It's definitely helping them stay together better.

Made these quite delectable fake pizza squares using up the last 5 slices of this toast bread product that is low carb ( kinda like melba toast but in the shape of a slice of bread. )
The toppings were minimal. Used Passata again, spicing up that tomato puree, then adding 2 slices of pepperoni to each, bits of bell pepper, mushroom and topped with very fine grated Mozz. Two was a serving.
A side dish ( 110 gr. ) of Ricotta cheese. 1 apple with PB spread on the slices.
I took 2 Jello cups ( free foods! ) out of the fridge but I'm already stuffed. hrmph!
Meal plans for the week ahead: apple crisp, salad with home grown alfalfa, roast chicken dinner, chicken wraps or chicken and mushroom Alfredo, corn chowder, roast beef dinner, beef barley soup, smokies with onion rings and French fries.
Metro Artisan Ham,scalloped potatoes and corn
Making split-pea soup using a ham bone & ham leftover from Christmas (from the freezer) lol. Had a busy morning in the kitchen, had a bag of apples that needed to be used up so made a large batch of unsweetened applesauce. Will probably use to make an apple sauce cake recipe I've had my eye on. Made a dozen chocolate chip muffins for the freezer and experimenting with "chaffles". I can't do Keto as I'm a carb monster but would definitely like to cut back. Made a batch of chaffles using, egg, mozzeralla cheese, cream cheese, garlic powder & almond flour. They are delicious! Cooked them in my mini dash waffle maker and froze a bunch. Curious to see how they will reheat in the air fryer- will use to make sandwiches or have with breakfast, etc. They are yummy just eating individually.
Tomorrow might try chocolate chaffles!
Not really hungry last night so we had some gardein chikun strips and wedge taters with a big garden salad with salad toppers. We had a big green smoothie after our workout so we weren’t too hungry.

Having a bit of a rough day so we got plant based Panago pizza with a side salad
Fajitas using pre cooked grilled chicken bought on clearance at SDM, homemade fajita mix (savings 1.00) and sweet onions, rainbow peppers and sour cream with Don Pancho tortillia shells (my fav from Metro)
Ended up making "clean out the fridge soup " so it was cauliflower, onions, sweet potatoe, russet potatoes and rice and cubed tofu. Added some fresh spinach to our bowls. Easy peasy
Last night I had planned on Pasta with Meat Sauce but got a face to Tomato Sauce, we had a jar of Alfredo Sauce in the Pantry so quick switch to Chicken Alfredo and dinner was served.
I think if somebody did not want what I was preparing I would just let them make their own.

That is nice SA that your Mum made dinner as I think she is not working. Sometimes I get the idea that you do the majority of the dishes, shoveling, laundry, cooking etc on top of more than FT hrs. Not that it is any of my business but I just hope you are able to share house chores.

Since I completed my hardest ride today at 13km and a super long day at work for Dh and myself I made beyond cheeseburgers with Big Mac sauce. All plant based and soooooooooooo good.
