Im making BBQ chicken wings tonight for dinner with home fries, some sort of vegies and a salad, probably tomato, cucumber and fresh dill with a homemade vinagrette.
I bought a family pack of mince meat the other day and we made them into hamburber patties. So that for dinner tonight. Hamburger patties: onions, egg, heel of bread soaked in water, and fresh dill
Loaded hamburgers tonight: onion slices, tomato slices, lettuce mustard, relish and a piece of hot pepper! Pickles on the side!
Breakfast for dinner last night. Chipotle black bean tofu scramble with spinach wraps. Mmmmmmmm

I was out this afternoon and came home to making Wings for her, BBQ Chicken Chunks for me I can turn into BBQ Chicken Caesar Wraps and I will made some homemade Air Fryer Fries
Corned beef hash.
I felt inspired so I made “meatloaf “ garlic smashed potatoes, gravy and asparagus. I really love this comfort meal!
early this morning I cooked up 6 red pepper halves ( stuffed ), and each one is only costing me 149 calories!
So thrilled when I punched in all the numbers. Konjac rice makes all the difference as well as using x-lean gr. turkey, Swiss and Bocconcini ( 2 of the lowest fat and calorie cheeses ) and canned no salt added diced tomatoes that I pureed and thinned with water to make a sauce.
Lots of tasty herbs and spices were added.
I'll be having one for both my lunch and dinner today!

Last night’s dinner was spaghetti squash and sauce. Tonight will be the leftover meatloaf and a side salad.

Hankering for my own ( lower calorie ) version of Chana Aloo. First I cut the recipe in half, then further reduced the amount of both chickpeas and potatoes. The spices make all the difference.
The finished mixture gave me 2 cups, so I'll stretch this out and allow a 1/2 cup as a side dish serving ( @ just 72 calories! )
I'll make this up again.
Used up 2 partial boxes of pasta and added to the leftover sauce and that was dinner. Actually I had some for breakfast and then some for an early dinner before my workout. Post workout snack will be an apple and peanut butter.

@harbie funny enough for most of my adult life I never ate anything remotely spicy....now I can't seem to get enough! ha ha And what is it about the simplicity of making many Indian dishes? Nothing complicated with satisfying results!
Hey! way to make many meals from pasta! Iirc, that used to be the " go-to " fuel ( carbs ) for workouts at one time.
@walkonby same here. I’m from a European family so it was just meat and potatoes with some kind of veg but nothing spicy but Dh was the opposite. Even though he is originally from a European family his dads new wife is from Uganda and so it was all spices all the time. I actually had to learn how to make her butter chicken and a few other individual dishes before I could marry him :tongue:(kidding). Now that we are plant based its literally the easiest cuisine to make. Lots of veg meals that we just sub the cream for coconut milk. Easy, inexpensive and oh soooooooo good!
I snagged 3 roasts at $3.99/lb, each one was approximately $30 each. I am cooking up one of these today and will make mashed potatoes, gravy, asparagus and maybe some roasted carrots.
This roast is quite big, we will not eat it all but we will put it in the fridge for sandwiches this week and whatever we do not eat will be frozen to be used in Shephard's Pie at a later date.
Discovered 3 x 400 gram bars of Mozzarella way in the back of the fridge " hiding " BB date of April 19th. Since I'm not eating that type of cheese atm, I asked DH if he minded me making up a very large lasagna to at least use up one block. Lets put it this way, I did not have to twist his arm.
Not a fan of grating and freezing cheese, but if the guys don't seriously start nibbling at the remaining block(s) I may have to. I only had 15 oven ready lasagna noodles in the cupboard, so a 3 layer version it was

I’m getting tired of chicken and meal planning in general.
I made homemade shake and bake chicken thighs tonight. The kids were not impressed. Their favourite is still chicken thighs baked with absolutely nothing done to it or put on it. We had M&C and steamed California veggies.
Tomorrow we’ll have chicken wraps, using the leftover chicken thighs. Sliced apple, lettuce, cheese.
I took our younger daughter to my parents for dinner; they bought some nice live crabs at H-mart and mom made crabs two ways: traditional asian stir fried and steamed.
My hubby and our older daughter stayed home and they ordered pizza hut. They chose to have pizza instead of crabs.
Going to make Homemade Pizza with the usual suspects: Pepperoni, Mushroom, Onions, Bacon, Cheddar & Parm. Will have a Salad on the side

getting ready to go to the cabin for the weekend, packing lots of goodies, mild temps & rain Sunday so might be the last trip as we have minimal snow now. Hoping to have a bbq this evening if its not too windy!

50% off Domino's pizza! Asked my kid what he would like for dinner. He said pizza. This kid never wants take out!!
I can't remember the last time I picked up pizza.
