hot dogs with onions rings and toppings of choice.
Tonight we will make Homemade pizza with Pepperoni, Onion, Mushroom, Bacon, Cheddar & Parm. I was going to make a salad to go with it but I had Caesar Salad wraps for lunch so might skip the salad.
It feel like a curl up on the couch with pizza and watch a movie kind of night.
For Sunday's dinner, DH and DS went back to the burgers I had BBQ'd on Saturday, I stuck with my plate of reduced calorie fare.
Tonight we are going to make Steak Sandwiches using Beef Strips with Mushrooms & Onions, I would add Peppers but Mom isn't a fan, on a toasted bun with Cheddar Cheese.
On the side we will have Homemade Potato Wedges and a side Salad, I will put Peppers in my Salad with Carrots, Cucumbers and Non-Creamy Caesar Dressing.

i got a large pack of ground beef at costco and we already made burgers on the bar-b-que. Tonight will be beef and bean burritos. Tomorrow's night will be spaghetti and meat balls, bread sticks and side salads.
We'll all be picking from what's already cooked and in the fridge. The guys already packed up some Chana Aloo and corned beef hash for their work meals, I'm trying to recover ( from the guilt! ) after enjoying my cheat day yesterday.
So many naughty foods. All delicious.
Anyhow, I'm back eating my " good stuff " again. Both lunch and dinner for me will be a bowl of homemade fish soup, a 1/2 of a stuffed pepper, and garden salad.

Lasagna! DS requested it last week and I finally was able to make it today. It is out of the oven cooling and the kitchen is clean. Woohoo!
Tonight I just pulled some homemade lasagna from the freezer. Fresh strawberries with a touch of cream for dessert-Simple and yummy.
Mexican beans and rice over shredded kale with the trader Mexican toppings like salsa and Tostitos.
Tonight will be Chicken Enchiladas.
We had leftover Enchilada Sauce in the Freezer, we keep Shredded Chicken in the Freezer and I had a pepper that needed to be used up.
souvlaki ( again ) this time using thighs, freshly made tzatziki, a mango salad, coconut shrimp and corn on the cob spicy riblets.
DS was blown away at how tasty the shrimp came out, DH barely believed I made 'em from raw shrimp....as in from scratch.
I did pal....I did!

Kale Caesar salad with homemade tofu feta , roasted sweet potatoes with a garlic/citrus spice blend from Trader Joes ( my SIL brought it back for me). I also added the leftovers of my garden romaine salad with cucumbers I had. Use the vinaigrette dressing.
@harbie you got my curiosity going with the Tofu Feta! I use about 20-30 grams of real feta ( light version of course ) nearly every day in or on many of my allowable foods. ( I think I like the salt... ha ha )
I searched how to make the tofu version and it actually sounds pretty decent. BUT, I cannot bring myself to go the tofu route, I don't know why it gives me the willies?
btw, your salad made my mouth water! Must be near lunchtime for me....
Tonight we decided on Homemade Pizza before we cannot use out oven, oh the joys of not having AC. Although I have purchased a portable unit but do not think it will cool the house enough we could use the oven but hopefully we can at least use the stove or electric skillet.
@walkonby I highly recommend this recipe. It’s from one of our fave restaurants. I add a bit more salt and lemon juice because I like a saltier and more briney flavour.

I used to loath tofu and I was terrified of what I’d eat for protein when I went vegetarian first ( made the change due to kidney stones) but I have found way to prepare it that I now LOVE it. I do a “salmon” that is sooooooo yummy. It’s all in the preparation and execution. Breaded and air fried would be wonderful and tossed in a sauce at the last minute to keep them crunchy would be delicious.
I agree @SassyAshley if you haven’t had it done properly then it can be difficult. I don’t have an air fryer but am looking for one so I can get crispy tofu without using the oven.

Today,'s dinner we enjoyed bbq chicken skewers with sliced oignon red and green peppers and zuccini in it bought 4 skewers at maxi ans cie in a pack they are 12$ and had an offer of 2000 pc points not bad.And they have pork skewers too I want to try next time. with patatoes salad and ceasar salad.It was delicious too.

@harbie : thank you for posting a recepie of tofu.It is something I never try but would be willing and curious to try someday.Seeing yours post being vegetarian is not a boring thing haha :)

@harbie , I love out Air Fryer so much I also bought the double Air Fryer. That was the only downfall for me was if we wanted to make Potatoes and Veggies in the air fryer I had to make one, try to keep it warm well I cooked the other so the Double Air Fryer made sense for us.
I will warm they are a bit loud. I have heard of some the newer ones are not as loud but you do know when it is running.
Rice bowl- Chicken, rice and tons of veggies. Leftovers for tonight.
@cath007 Dh and I are actually vegan (100% plant based so so dairy, meat, anything that comes from an animal) and it’s anything but boring. Funny thing is I find it easier to cook vegan than when I had to cook meats. There is no cross contamination risks, making sure the chicken is fully cooked, not the same number of recalls especially on meats. The only thing is that it can be expensive if you want the convenience of things like burgers or “chickun” . As long as you are aware of that you can adjust accordingly.
@SassyAshley what brand did you get? I’ve been holding off thinking it was just hype (kinda like the instant pot) but the more I see people using it on IG I’m leaning more towards biting the bullet and getting one.
