Yesterday I picked up a hot chicken at Costco. So tonight I will make dinner using the leftover chicken. Thinking salad with chicken. Simple. Easy. Healthy :)
Tonight's supper was Cream of Broccoli soup (mix by Knorr) with torn up slices of sandwich loaf (I'm out of crackers). Was able to use up some of the milk that is going to expire soon!
This morning (early), I cooked that package of perogies, mixed them with butter and enjoyed them with preserved grilled artichokes (Longo's) and watermelon slices. Best pantry surprise of the summer! I did leave leftovers in the morning but no one else went for the food. So I had lunch too. :cool:
I had ZERO interest in cooking last night so Dh and I ordered pizza. Despite the initial frustration it worked out in the end. We got home and noticed it was the wrong pizza and in the end we got the correct one, a credit on our account and we’re able to give the original pizza to my parents so they’ll have pizza for days :lolsign:.
Still looking for tonight’s dinner inspo…… wish me luck

Finally my roasted red pepper/cauliflower soup is simmering away in the large pot. I put off making it for so many days ( just not up to it ) that both my heads of cauliflower and the bunch of cilantro had seen better days. The cilantro was usable but not as bright green and fresh and I had to scrape a few black spots off the cauliflowers.
This hopefully will be part of my dinner tonight IF I get it all pureed up.
Tonight I made a sheet pan fajita crunch wrap in which I veganized it. So good and easy.

I haven’t had liver and onions since I was a kid and my mom made me at least try it. Couldn’t do more than one bite so that was my one and only time.
A&W beyond burgers tonight since I was literally cooked when I got home. The humidity nearly killed me at work today!
lol^^ @harbie now I am eating a liver and onions " burrito " using the Lavash sheet as a wrap for my breakfast....leftovers from dinner last night.
Made a Mexican version of that crunch wrap last night. So good but soooooooo filing.
Jays game over....check! They win? ....yes, check! Anniversary dinner at The Pickle Barrel to be enjoyed soon, and when we're all done DH can shout out CHECK! ha ha ha
Going to make a Taco Pie with Salsa Chicken from the Freeze with some Mushrooms, Peppers & Onion and Cheddar Cheese.
On the side I will make a Ranch Salad with Romaine, Tomatoes, Cucumbers, Cheddar, Bacon and maybe some Peppers we will see.
Various flavored sausages with homemade si bon fruits chow chow ketchup,.mashed patatoes with a salad.

Tonight’s supper is roast chicken, Cheemo Perogies, steamed cauliflower, sliced cucumber, sour cream, cranberry sauce, and a cup of milk.
We’ll have a choice of chicken sandwiches or chicken buns tomorrow with tossed salad.
Two of our children decided to have leftover noodles with roast chicken, steamed cauliflower, and fresh sliced apple.

Last night was a huge garden salad with Mexican roasted corn and black beans and plant based chickun strips with salsa as the dressing.
Tonight is going to be gusta plant based Italian sausages over pasta.
We where to tired and had errands to do So AW with a coupon otherwhise not affortable...a treat
burgers and onions rings.

I had no plan for dinner last night. Looked at the Flashfood app and saw a veggie box for $5.
So decided I would pick it up and start with that for dinner.
the end product- Steak, roasted potatato and veggies sauteed in coconut oil
i've been so busy with work but managed to use my PC personal offer of 200 points/$1 spent on pork and the PC free from pork chop combo at RCSS was $1.91/lb. Broke down the chops, nicer pieces were marinated then bbq for one dinner, the bones went into broth, and the smaller pieces went into a pork carnitas (burritos) and leftover pork carnitas turned into pork tortilla soup - it was my first time making the soup; it was easy and yummy!
Dinner is written out and recorded in my food journal, now I JUST have to stick to eating what I wrote down.....lol!!
I've reserved enough calories for some air popped popcorn before dinner, which I am looking forward to.
Then my large garden salad, 1/2 a wee can of tuna mixed with grated carrot and a smidge of mayo on a Ryvita crispbread, topped with slices of sauteed zucchini and mushrooms and veg sticks ( green pepper and baby cucumbers ).
I will still have my late night snack that can tide me over till morning and sometimes the snack is more exciting to have than dinner! ha ha
More yogurt with fruit, and hummus with veg.

BBQ Chicken Breasts with leftover Instant Pot Baked Potato Salad and a Ceasar Salad
Fusilli and cheese with broccoli ( we didn’t have the proper pasta for Mac and cheese)
Tonight I made nacho meat and veggie sauce, served with corn chips and melted marble cheese on top. I froze 3 small portions for future meals, when I’m away for work.
Today’s lunch was Schneiders wieners, Cavendish french fries, fresh sliced apple, cucumber, cherries, blueberries, and a glass of milk.
Tonight’s supper is my home made sweet and sour pork with California mix veggies and rice.
Tonight I am making my new Fav Mozzarella Chicken.
It is a bed of Cherry Tomatoes, Onion, Garlic and spice topped with Seasoned Chicken (same spices as on the tomatoes) and top with Mozzarella and because I can a little fresh Parm baked off in the oven (thank you AC, we can cook in the summer again) and served over cooked Pasta.
It was 3 very small lamb chops done in a cast iron pan for me, slices of roasted sweet potato, green beans and a corn on the cob. Over my carb allowance for the day but so worth it! lol
I made a kale Caesar salad with tofu feta, spicy roasted chickpeas and spicy roasted sweet potatoes and a Caesar vinaigrette dressing. Soooo good that I’m craving it for breakfast :lol:
