^ you've probably already eaten, but if I overdo a pork or beef roast, I slice it, then reheat with a bit of water - either in the oven or in a pan; it rehydrates it just enough and doesn't take away the flavour.
Tonight for supper, I made my rib sauce, but used it to bake a pork steak cut into strips; served over leftover pasta shells. I had a bowl of salad, too. Husband had two slices of carrots - his 'serving' of veggies, lol!

Tonight we had a variety of things out of the fridge.
I pulled out pre-cooked pulled pork from the freezer. We will eat it tomorrow with hotdog buns (free from coupon) and cucumber salad (cucumbers free from dh's co-worker's garden) with a glass of milk. Tomorrow night we are celebrating LO's 2nd Birthday. Chocolate cupcakes with blue butter-cream icing, home made. I bought Chapman's slicing vanilla icecream to go with it.
