Panko breaded cutlets and pasta. I bought a few cutlets (aka tenderized hip steak) since they were pink stickered at 30% off plus 200 points per $1 on beef at RCSS. I also picked up some Ace garlic bread since I had a coupon that expires May 31st.
Last night I had steak, peppers, mushrooms, and asparagus all done on the bbq. The asparagus was local and so tender and delicious, it tasted like fresh peas, but the peppers were outstanding. They were smaller yellow and orange and the sweetest peppers I've ever had. As I was eating them I thought, "this is so good I've got to post on the SC dinner thread". Lol, does anyone else here do that?

Found some left over gravy and mashed potatoes in the fridge, grabbed a small bag of 4 homemade meat balls from the freezer, chopped up the meatballs mixed with gravy and topped with mashed potatoes tossed in the over half an hour with some asparagus roasted in olive oil, salt, pepper and garlic powder. Not bad considering I had no clue what I was going to have and was on my own for dinner.

YUMMO!!!!!!
I did end up making the Clam Chowder papillote with Brie recipe from the All you Need is Cheese Magazine and it was REALLY good...I just used regular yellow flesh potatoes cut small and ditched the hot sauce but did add a pinch of red pepper flakes to the mixture...a keeper for sure!!! (I'll try it again over the summer with different seafood, etc)

Tonight we had oven baked chicken things, fresh french bread, carrot sticks with ranch dressing, green grapes ($1.99/lb at Sobeys - 25c coupon), with a glass of milk. LO ate quite well and had a strawberry smoothie instead of milk.
