Last night Mom made homemade Chinese for Dinner, YUM!!!!!!!!!!!!!!!!!!!!! Had just enough left for lunch today. Chicken Fried Rice and Teriyaki Pork with mixed veggies (whatever was in the fridge)
Tonight if something to use up the last of the pork roast night used last night so no idea but Mom is home to figure out.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I'm going to attempt a new recipe in my Instant Pot (pressure cooker). Mac and cheese! DS takes frozen Michelina dinners for lunch sometimes, I'm guessing this version has GOT to be better than that?

Swiss Chalet tonight, I'm going to have the Spinach and Mandarin Chicken Salad with a bowl of Chalet Chicken soup. I hope the salads good I've never tried it.

My mac and cheese was a bit of a fail. Too squishy, and with the parmesan, DS didn't much like the flavour either. I will try to salvage it with some taco beef or something.

Some of my meals in the last few weeks have been:
Gemelli pasta( an S shaped pasta that's loosely twisted) in a cream sauce made with herb & garlic cream cheese, thinly sliced red onions, capers and smoked salmon ribbons.
grilled stuffed portobello mushrooms (same as previous recipe)
mac and cheese made with fresh parm and tilamook cheddar and some hot sauce it's a elbow macaroni that is thicker with ribs on it.
Guinness bbq'd chicken thighs with a Caesar and jalapeño ranch macaroni salad
bbq pancakes with fresh fruit. Yes I said BBQ pancakes :D

I'm hungry after reading the last few pages of this thread! Would love to have tacos but with the cooler afternoon, I'm thinking dinner will be Lipton's chicken noodle soup with some seaweed and sliced celery.

I hope everything is OK with your Nan Keljo, all my prayers are with you.
Tonight we had Beef ribs with baked potatoes and veggies on the BBQ. It turned out really good.
