    I had champaign brunch at the local golf club at 11 today..... It's doubtful I will be having dinner today maybe even tomorrow!! Lol nursing a big food baby

    Oh Natalka, you SO need a pressure cooker! Soup is amazingly fast in it. I have a chicken based soup I used to make in the crockpot for five hours, made it in 40 minutes in my Instant Pot. Tonight I tossed my turkey bones into a bit of liquid, 30 minutes later I have amazingly flavourful bone broth that I will make into soup probably later tonight or tomorrow with the turkey thighs I also bought yesterday!

    Zonny, I've thought about it, but it's rare that I'm rushed for time. Boiling chicken for an hour and a half is no biggie!

    Last night was lasagna from Costco (it's pretty good but defiantly not homemade), a salad fusion of Italian and Greek. Basically a Greek salad but with a balmasic and grainy mustard vineagrette and garden fresh basil and I also made garlic toast with parm and jalapeño jack cheese

    I don't know about the rest of you but one of these days I definitely would like to make it over for dinner-especially to Keljo's and Harbies and Natalka's Ukranian feasts amongst many others!! I will also have to check out this Edaleen cheese mentioned from south of the Can border as I will be out that way in a couple of weeks. Also looking forward to lots of fresh BC fruit!

    I just finished frying up two pkgs. of bacon for BLT's. Boy! what a bad time for fan above the stove to die.

    I want to have everyone else's food, too - we need a giant potluck for SCers!

    Tonight for supper, using chicken I boiled for soup yesterday, I'm making what my son calls chicken stew - cut up chicken meat, sauteed onions and celery; peas, carrots, corn, green beans - all put together with a garlicky mushroom sauce and served over smashed potatoes.

    Almost forgot - with homemade pickled beets!

    Oy, I quoted it, then forgot to comment.
    Yes, do it in the oven. A pound of bacon fits in a 9x13, lined with parchment. Overlap at first, then they shrink. I do it at 350 degrees, can't remember how long, but once it starts cooking, I pour off the gunk, flip, and keep baking.

    Bakin' bacon is the way! Lay it out on parchment paper in the oven.

    I didn't plan for supper well, so fished something out of the freezer. Since buying my pressure cooker I've started freezing meats already seasoned and ready for the cooker. So I took out some pork chops that had garlic, soy sauce, brown sugar and ginger. Put them in frozen, they will be done in about 40 minutes. Already have rice cooked.

    Tonight my honey is making a fancy pasta dish with chicken. Saturday night we did 2 whole chickens on the bbq (flattened and cooked with a brick wrapped in tinfoil on top- Brick chicken we call it) So had that with potatoes grilled veggies. Sunday night we used the chicken to make quesidias (sp) with peppers, onion from the garden etc. Leftover chicken to top my lunch salad today and tomorrow! Going to have to buy more for the freezer for sure!

    2 All Dressed Hot Dogs made by me(purchased all the stuff) ,diet pepsi and frozen rasberries yogurt for dessert for later.Very hot day in here.32 degres now.
