In honor of Cinco de Mayo, I grilled some chicken marinated in taco sauce and am making chicken tacos.....now all I need is a Corona ; )
we didn't feel like cooking tonite and i had to go to a mommy group so we decided to order dominos pizzas for dinner. Hubby had triple pepperoni and i had chicken and bacon with ranch sauce. Didn't feel like paying extra for toppings so i diced fresh tomato and threw them on my pizza :)
Last night's supper was grilled cheese sandwiches with cream of mushroom soup. It was 33C outside.
BBQ chicken and potato salad
Hot hamburger sandwiches with asparagus and garden salad.
..Taco Friday :) ...need to use up some of the Taco kits that I have with the shredded cheese FPC :)
I snagged a discounted fresh whole chicken for $6.00 yesterday so I mixed up the various dry herbs and spices that go into butter chicken
( using no butter or cream ) just mixed them into Greek yogurt, added a splash of both a garlic Caesar dressing and some Raspberry vinaigrette. Brushed it liberally all over that bird and roasted at 350. The aroma is amazing in here. Flipped it over and set the oven to broil to crust up the under side as well.
I am delegating DD to peel and cook up some carrots. Also a garden salad to go with.
we have AC but we still avoid using the oven during the summer because it really heats up our small condo plus we're kinda lazy LOL when it comes to fixing dinner. tonight we're gonna have chicken wraps
leftover casserole
Tacos tonight.
KD, Schneiders Country Naturals wieners (WM paid me 50c to take them home), cauliflower, and a glass of milk. Very inexpensive supper.
..as I posted in another thread, there are a lot of people/families from my community living in Fort Mac, so we have a fundraiser happening today (all proceeds going to the Red Cross) there will be local talent (music), tickets will be sold on some awesome prizes, and tons of food that has been donated i.e. hotdogs, hamburgers, fries, soup, whatever else, so I'll grab dinner there :)
Chili, garlic bread and salad.
Last night we had homemade baked Chicken Fingers with Roasted Potatoes.
Tonight I am not sure yet, maybe Burgers with leftover Salads (pasta, potato and lettuce to make some sort of green salad). I will dig through the freezers shortly and see if something jumps out at me.
