Another fab Christmas Day meal has been enjoyed. We did the " courses " thing again, started at 1:30 in the afternoon.
The first was a filling of chicken breast/sweetlet peas/white sauce inside flaky Vol-au-vent pastry shells.
The second was butternut/ricotta/chestnut filled ravioli, with a clementine buttery sauce, fresh grated nutmeg and Parm garnish.
Then came the big scoop of Waldorf salad with a side serving of various cheeses.
The 4th course seemed to be the biggest hit, thin slices of pork tenderloin filled with feta, asparagus and spinach, served with melon balls

We all took a breather to chat, exchange small gifts, sip more wine....snuggle with the furbabies.
Then 2 more small courses, a skewer of grilled garlic shrimp over veggie fried rice, followed by corned beef sliders with corn on the cob nibblers.
Another longer break was fully necessary......then we bravely tackled the final traditional roast turkey meal with all the fixins.
This year I jokingly made up a small bit of mashed sweet potato, topping them with mini marshmallows. I have always made fun of people who add more sugar to sweet potatoes but this was actually delicious...ha ha
Dessert and coffee was put out on a buffet table at 10:30 p.m. We all did our best to eat some of each sweet, but there is only so much room in our tummies.

We had 3 dinners to go to. First was hubbys mom, she made ham,mash,yorkies,gravy and brussels
then we went to my parent's where we had turkey,mash,cabbage rolls, marinated salad and pudding
then we went to my hubby's dad where he made ham,pudding,dressing,yams ,spring rolls and pancit (filipino noodle dish) which is delish btw.
so much food.
we are blessed.

It's been a wonderful Christmas so far!! lots of great food so we are all indeed blessed!! Today I have to go through the fridge and decide what stays and what goes. I did get an ActiFry for Christmas but haven't tried it yet as well as a waffle bowl maker so excited to try both. Boxing Day night ended up with a huge pop up Christmas party, had about 40 people at one time. Luckily there was lots of turkey leftover, so I made turkey salad and used mini brioch buns and made sandwiches with leftover cranberry & stuffing, they were yummy!! Wings and I had made a cheese ball earlier in the day and lots of munchies, cheese, cracker, meat, pickles, etc. I'm a little scared to turn on my Christmas lights tonight hee hee...but all are welcome and the more the merrier!!!!

I have been in hiding and although I cooked last week not a lot of inspiration more of a what can I get on the table fast.
This week is improving, tonight I made: Mexican Rolls ups which had Taco Seasoned Cream Cheese, Taco Meat with Mushrooms, onions and Peppers wrapped in a tortilla. Also made a Bacon Ranch Salad to go with it2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I have a lovely beef roast to go in the oven later, I might open the Actifry (T-Fal Air Fryer) and try potato wedges..coleslaw and have leftover rice so might make fried rice as well

I am currently putting the makings for a Spaghetti Sauce into the crock. when i get home, it will be finished off with a caesar salad, bread and some nice red wine.

Happy New Year to all my wonderful SC friends!!! It was a lovely New Years with lots of great food, family, friends & fireworks!! Not long home from a big turkey dinner at my uncle's house so will be spending the evening zzzzzzzzzz
