Tonight will be Homemade Take-Out
Homemade Burgers with Homemade Burger Sauce (I am obsessed, don't think I can go back to my old way of eating burgers, I am sure one day but no day soon) with Poutine made from Oven Fries.
So yummy and saved the $30 to $40 it would have cost to order from the local burger place.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Dinner was supposed to be something to use up the broccoli we have in the fridge, I found a recipe for a Chicken Pasta with Broccoli but at dinner time, the thought of following a recipe was not high on my list.
So quick pivot and instead I did Mozzarella Chicken over Pasta with a Cheesy Garlic Naan. I guess it was a good pivot because as Mom ate her bowl she said "WOW this is super good tonight, it tastes better than normal." Tonight is Lemon Herb Marinated Chicken with a Greek Orzo Pasta Salad with Cucumbers, Peppers, Tomatoes and Feta. I will also be making some Broccoli on the side which needs to be used up.

It'll be a huge beef stew in less than an hour. The cut up blade steak/onion and liquids are in the pressure cooker atm. DH is in frustrated mode putting together a double bed box frame thingy. Some assembly required? Good grief! I can tell by the expletives it's a bit more than some. The stew will be satisfying after that chore is done.

Have lots of chicken and potatoes left over from last night so tonight I am thinking Quesidilla!
(Have onions and peppers chopped in the freezer so will be easy to saute them up!)

Two items for dinner tonight. A modified version of our favourite sausage potato casserole. There was no sausage in the freezer but I had bacon! ( diced up 2 x 375 pkgs. ) Added lots of other things to beef up the final mixture, including using up my last 7 white potatoes.
The other dish is a cold salad made because I noticed the baby cucumbers in the crisper were going! Saved them from ending up in the compost bucket.
Added corn niblets, thin sliced carrots and white onion, diced tomatoes and fine diced feta cheese. At a crossroads now, can't decide what dressing to mix into this??
Should I go creamy ( ranch, Caesar ) or with any of the tangy Vinaigrettes? ( raspberry, balsamic ) .
It is naked now in the fridge, will get DS and DH opinion on what they'd like on it.

@walkonby , I love those kind of meals where it is all based on what needs to be used and putting them in something, anything so they do not end up going to waste.

Tonight is going to be Dumplings, I know they are probably not authentic but we love the Dumplings from Costco, they last forever, I usually grab two bags of each when they are on sale.
On the side we will make Homemade Chicken Fried rice. I have the rice on a cookie sheet cooling off an the chicken is in the fridge marinating.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Yesterday was every cooks dream! In the famous Oscar words of Sally Field " You like me! right now you like me! " .
it was so satisfying to witness the guys making yummy noises while eating. Then about 2 hours after dinner I put the lava cakes in to bake.
They were out of this world ( first time I ever made these ). The cakes themselves were dusted with icing sugar, accompanied with slices of
fresh mango, strawberries and a dollop of whipped cream! Sometime after midnight the 2 of them went back in for a second helping of the
main course dishes! I was fast asleep by then.
So this morning I've placed some dry beans to soak for chili ( that'll be Monday's work meal ), atm I'm in the throws of baking up 3 thick pork
loin chops a la Shake 'n bake for later tonight, with cooked carrots and buttered egg noodles. There's lots of time till the dinner bell rings but I
always prep ahead.

Tonight I am made Air Fryer Pork Tenderloin, this was the first time I cooked meat that wasn't frozen in the air fryer (i.e., Chicken Fingers) and not going to lie was a little scared but turned out great. It has a glaze of Olive Oil, Balsamic, Dijon and Italian Seasoning on it, I will make again.
On the side I made some Roasted Potatoes and reheated from Grilled Zucchini, Peppers and Onions we had in the fridge.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,
