^^^ Beef Stroganoff is another favourite dish for me! Especially with lots of fresh sliced mushrooms in it. Enjoy!

first time making enchiladas. I looked up some recipes online. Bought a rotisserie chicken from costco. Enchiladas sauce and beans from walmart. Ice berg, tomatoes, onion, cilantro and avocados. It was easy and tasty. I removed the chicken skin and laid them on a separate baking sheet to crisp them up. Once baked. I added all the veggies and turned it into a supreme enchiladas LOL

@Purdee I am speechless! I have never made or even eaten an enchilada in my life. I know they exist but just never went out of my way to try one.
Yours look soooo good! ( all I see is a sea of cheese! lol ) Using the Rotisserie chicken like that seems like a no brainer. Now if one day I DO make
any I am definitely getting the cilantro as I LOVE that herb. People either love it or hate it. Congrats on your presentation!!

@walkonby thank you. We like Mexican dishes; he likes the cheese and I like the spices and vegs. My days are rather busy with 2 little ones so I like to find short cuts whenever possible in cooking and of course when i can get ingredientson sale. LOL

@Purdee they look amazing.
We love Enchiladas, we only started making the maybe 2 years ago (I though they weren't for me, I am not big on spice) but we found a recipe for homemade Enchilada Sauce and were able to adapt it to my lack of spice tolerance and now they are the regular rotation, they are so easy to make, who knew????2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Last night I ended up making Loaded Baked Potato Soup, I found russets at Giant Tiger which are must for this soup only issue is they are so small I ended up peeling 15 potatoes instead of my normal 6 to 8.
Love this recipe because it does not have cream cheese or sour cream (I think they make it too rich for me) this one uses half & half but I do half. half & half and half Milk and it is perfect for us. Cheese already makes it so rich.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Monday already! Where do the weekends go? Made a large pot of spaghetti and meat sauce on Sunday morning, " heathied " it up with fresh veg ( onions, mushrooms, bell peppers and garlic ). A work meal for the guys today, late night dinner last night and there is still plenty left. @SassyAshley , DH came to NF with me Sunday in the early evening and we also grabbed the ground beef. Into the freezer they went too. Bought more grapes also.

Yesterday morning I made meatballs (for our dinner- pasta and homemade sauce pulled from the freezer) and I made a meatloaf for the freezer to pull out for a dinner next week (with mashed potatoes and veggie).
Tonight- Leftover pasta/fend for yourself.

I was tired today so we ordered pizza. I went to pick it up (instead of delivery) so I tipped myself and added it to my "extra effort savings" account

@SassyAshley agreed!!! enchiladas were easier to make than i thought. I was intimidated by Mexican dishes - well except for tacos and burritos LOL 'cause we make those fairly frequently
tonight, my hubby works evening shifts so my girls and i are on our own for dinner. We went to Chuck E Cheese to play some games and we had their pizza for dinner. we have the 2-months fun pass and the manager recognizes us now so when i order extra pizza sauce on the side to dip the crusts in, he did not charge us for the sauce. Little things like that makes us feel nice

I will be sauteing a lovely fresh salmon steak for my dinner later tonight. Fresh lightly steamed green beans ( I love them with a bit of bite ) as my side.
The guys took canned soup again for work ( BLECHT!! ) They think because it says Sirloin Burger or Steak and Potatoes on the label it must be awesome! lol
I do understand their reasoning for soup, it's darn cold out now!

Totally feeling soup season over here, made Potato Soup the other night and was kind of sad when the leftovers were gone.
Tonight is a mystery, we have a shipment going out at work today I have to do the paperwork for but I also have a full schedule so I may have to work late tonight to get the paperwork done (grrr, it was supposed to ship Tuesday and I scheduled for Tuesday but they moved it to do today and I already had a full day). So just to be safe I grabbed some Chicken Fingers so if I have to work we have a quick dinner option without getting take-out.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,
