used up some of the leftover turkey - cooked spaghetti, brocoli and a can of mushroom soup, 1/2 cup milk, s&p, cubed turkey all mixed together. yum. nice way to use some of it up.
Had enough of Christmas leftovers, so we had takeout. I had chicken fingers (this one restaurant makes them SO good!) and steak fries - yum!
Yesterday I made plokkfiskur for the first time since eating it in Iceland and loving it. It is a simple combination of boiled cod or haddock (I was lucky enough to still have some wild cod from Iceland), potatoes, onions, butter, flour, and salt and pepper. Everything can be done in a single pot! Mine turned out really nicely even though I didn't have the sweet rye bread to accompany it with.
I think tonight I am going to make a vegetarian stir fry with basmati rice. If I didn't forget to take out some meat earlier on, it would have been a chicken stir fry! :lol:

Seriously I have no idea. I spent the day primimg ann the new dryall and I am hurting :(. DH may just have to fend for himself.
Meeting my DH in an hour for timmies, our timmies makes their new beef casserole stuff really well it is the only location that I think actually makes it right. So we will be doing that.
Have ham to use up, so made a stirfry with strips of baked ham, broccoli, onions, carrots, and cauliflower; served with potato salad and devilled eggs.

I'm going to do a rib steak with roasted asparaguswith garlic and a greek salad. Hope I'm hungry tonight, haven't been eating the last few days. Think I'm just still really exhausted from Christmas.

Tomorrow is lamb vindaloo, butter chicken, chicken tikka, channa masala, bombay potatoes and aloo gobi. YUM! I can't wait. I just wish it didn't mean sautéing all those onions and garlic. The smell makes me want to be sick!

Tonight is chicken breasts stuffed with brie cheese and granny apples with a pan dripping reduction and mashed taters :P

Mashed potatoes, tossed salad and chicken wings.
I used leftover baked pink salmon to make a meal with it mixed with mushrooms, sauteed onion, fresh green onion, all in a mushroom sauce, mixed with wagonwheel pasta - served with coleslaw.
I made three kitties VERY happy as I was deboning the salmon!
All kinds of snacks and munchies :). I'm looking forward to the smoked salmon on French bread with whipped dill cream cheese,lemon, and capers :P Mmmmmmm
