Baked tilapia, rice, sauteed spinach with garlic and mushroom. Trying to use up whatever we have, with a 2 week old baby, I try not to go out much especially with all the sickness going around.
Saturday I had made pork meatballs with a mushroom and onion gravy, served with pasta and coleslaw.
So Sunday was chicken noodle soup, with the above leftovers.

I made a simple chicken and potato curry with coconut rice.
Question for those who've made chicken curry before:
how do you get the curry to thicken? Mine is usually watery. I do add a can of coconut milk. The only way i can think to thicken the curry is increase my ratio of potato. I want the texture to be as close to the restaurant as possible.
TIA :)
Harbie's Lazy Chicken Pot Pie ;)
I sauteed chicken chunks, rosemary, shallots, garlic, thyme, pepper flakes and S&P in evoo and a bit of butter and then add flour and stock to thicken. Pour into baking diash and top with Pilsbury buttermilk biscuits ;) Man it was heavenly :P:P:P
Costco chicken, mashed potatoes, corn & salad
We thought outside the bun and got taco bell. dh = 2 7-layers burritos + 1 bean burrito + large fries; me = bean quesadilla + nachos supreme (no meat). Any night I don't have to cook is a bonus
Chicken wings, honey and garlic chicken breast pieces, and fries from Oh Thank Heaven for 7-Eleven - yummers! Enough left for supper tonight, plus I'll make a salad to go with.
Tonight will be corn pasta (gluten free) and my moms award winning homemade pasta sauce which she froze for me when she visited :) Will have a salad as well and maybe some garlic bread
Oh, Vee, yay for moms' cooking!
Change in plans here - my son absconded with 1/2 the leftovers for his lunch at school, so I'll make porkchops; roasted potatoes, onions, and mushrooms; and a salad.
No idea yet but I think I have some hot dogs I have to use up :)
Pasta with homemade pasta sauce, my last jar from summer!, green beans and trying my hands on making parm. bread sticks.
Maybe veggie dogs. Or frozen pizza (Belafresco is really good). Something easy.
Primo baked penne with italian sausage - recipe card i've had for years
original recipe: (dead easy)
1/2 lb hot italian sausage
4 cups primo penne rigate pasta, uncooked
1 can 680ml primo thick and zesty original
3 cups water
1 cup frozen peas (LIKE NO WAY, not happening lol)
2 cups shredded mozzerella cheese
remove sausage from casing, brown in skillet until meat is no longer pink, while breaking into bite size pieces. drain off fat. in large bowl, mix saussage, uncooked pasta, pasta sauce, water and peas. pour into greased shallow casserole dish. cover tightly with foil. bake 425 F for 30 min. remove foil, stir, and top with cheese. bake another 10 min. makes 4-6 servings.
my version:
ok this has turned into a HUNTS HOUSE lately :) ...so here's how i did it:
about a pound of italian sausage cooked then sliced into bite sized pieces. drain fat from pan. add green pepper, onion and mushrooms to the pan & cooked to soften. put all of this into a casserole dish: sausage, veg, box of uncooked catelli healthy harvest rotini, 680ml can hunts pasta sauce, enough water in that can to rinse the rest of the sauce out (not quite but almost to the top of the can), 398 ml can hunts fresh pack stewed tomatoes, garlic salt and hot pepper flakes. mix it all together. put foil on top cooked at 425 for 1/2 hr then stirred and added SAPUTO mozz cheese on top and baked another 10 min. delish!
Bird seed...seriously! sunflower seeds, pumpkin seeds and almonds. Stuck at work.
Fajita's! Using vegetables in the fridge before they go bad (broccoli, cauliflower, carrots, green peppers and onions). I spied a block of tofu but I've never used in fajita's before and didn't want to wait to dry fry it (hate the mushy texture...)
