LOL on you not knowing how you got them that way - gosh, that happens to me with so many things I cook - end up not being able to replicate stuff, because I do so much off the top of my head.
I am thinking now the only thing I did different was this roast was NOT frozen, I bought it and threw it in that night.
Perhaps in the past when I have thawed a frozen one, maybe extra water gets into the roast pan, diluting the gorgeous brown juices. I am grasping at straws here, lol. :icon_scratch:
And today of course I am sad because they ( taters) are all gone!!

Last night MIL made butter chicken :P and for dessert she made creme caramel :)
Tonight I'm making mustard & Panko crumb crusted chicken with basmati rice and either broccoli or asparagus. With a Guinness chocolate layer cake for dessert :P

Last night I made Crab Louis salad, devilled eggs, and egg noodles.
Thanks kashkoush! I have been feeding my family healthy meals, each meal has gotta have carb, protein and veggie, of course with 5 kids 7 and under, its hard to win 'em all!
Tonight we had whole roasted chicken (love the crispy skin!), pasta salad and leafy salad, my 4 year old likes it plain without salad dressing and had 3 helpings of lettuce!

I've been wanting to make vegetarian sausages forever! That's what started me on the whole vegetarian kick in the first place-- trying to cut out the nasty processed foods that are bad for me...but I'm completely unable to give up stuff like sausages. Oh sausages. My weakness. :P
So if you make them, please please, please tell me how they turn out!
As for supper tonight, we zipped across the border to do some shopping and stockpiling of corned beef for the upcoming St. Patrick's day feast. We ate out tonight at the Golden Corral. OMG. The Golden Corral. I love going there but I am glad Canada doesn't have that chain. Honest to goodness I would become irreversibly and irreparably obese mighty quick if we had that chain here. Gah. The selection! The desserts! Gheesh. I should probably avoid eating for a week because I indulged so bad. tsk tsk tsk.
Salads till Sunday, I swear to God. LOL.
Last night we had M&Ms chicken nuggests (gosh, they are good!), and oven fries.
Last night my husband made mashed potatoes, boiled veggies, and chicken burgers for supper.
Right now I am making vegan lunch meat from this recipe..Its in the oven right now with about 30 mins to go. Once its cooled down in the fridge for a few hours I'll use it for dinner tonight and see how it all turned out and post more at that time. Can also turn them into bbq sandwiches. :)

dh is home today so we're probably having burnt pizza :tongue:
Homemade pizza today. I made an extra batch of dough last week and froze it, and the dough was easy to spread after thawing overnight in the fridge. Will pop that in the oven later.
Nothing fancy at all here - I'm doing some cooking for a Ladies Night tomorrow, so I just plan to have something quick like leftovers from the previous night.
tonight was vegetarian indian food, with a small box of sweets to bring home.
already had one sweet with a huge mug of steaming hot spiced tea. so bad, yet so good :D
Update:
I made the vegan sausages this morning, just in the fridge now cooling down. I will grill them tonight and have on a bun with pickles, hot peppers, etc. I'll post how they were later,lol. :)

Ordered in Chinese food last night, so that's what's for supper again tonight.
I love takeout food when the leftovers taste almost just as good as fresh!
tonight will be shrimp pad thai and crabcakes.
I had leftover homemade pasta sauce, so I used that to make chicken cacciatore in the slow cooker.
I seasoned my chicken leg quarters with salt and pepper, Italian seasoning and garlic powder, and browned them on the stove. Then I transferred them into the slow cooker. To the same pan I added chopped onions and garlic, and browned them too. Added that to the slow cooker. Cover the chickens with my sauce and set on low. Will add mushroom and peppers towards the end and serve with angel hair pasta, and a side salad.

Since I made these earlier today, I just grilled them a bit to heat up. I added pickles,hot peppers,mustard and vegan mayo. I made them just a little too big but they seem pretty good. :)

My husband made salmon patties with rice for supper. He woke me up from my nap to let me know the food was almost ready. I haven't been feeling too good (growing baby).
I've been trying to find creative uses for Olymel chicken chunkies. For lunch we had a large salad - lettuce, cucumber, tomato, green onion, bacon, feta, dressing (oil, vinegar, greek seasoning), tossed then topped with cut up chicken chunkies.
Mmmm mmmm good. We celebrated St. Paddy's Day 1 day late. Kids were away at grandma's so we had to postpone the feast. :biggrin:
Corned beef, cabbage, and carrots. Realized too late that we forgot to make potatoes to go with but it was still a heck of a feast.
