I love these kind of soups too, before my meal or as a snack. Warms you up and fills you up with not a lot of calories, just yummy veggies mostly. Potage I think it is called? I usually make it with cauliflower, potato, celery, onion, and low sodium veggie or chicken broth. Yours looks so good! So cozy. :tongue:
Yesterday we all had a big lunch, so for supper I made pasta with mushroom sauce, coleslaw, and garlic bread.
The taco's at the They birthday party were a hit. The kids all sat at the table for over half an hour, and they ALL ate. They loved making their own. 2 of my dd's told me that they were going to do the same thing when they do parties for the kids. I'm happy I had that idea and the kids had fun with it. I can honestly say it's the first kids party I've been to that the children actually sat still at the table and they all ate something. The cake was a hit too, just a fabulous day all around.
Tonight I think I will have a watermelon salad. I just love it. It so easy, very filling and refreshing. I just cut watermelon into 1 inch pieces, cut red onion in thin slices and add it all to a bowl. I add chunks of feta cheese, drizzle it all with a small amount of balsamic vinigar and black pepper and mint. It delisious, and it's whats for dinner tonight :)
Tonight its roast, mashed potatoes and carrots with chocolate cupcakes for dessert. Finally a nice cool day where turning on the oven won't heat us out of the house!
Saturday - Cevapi (serbian meat), gluten free macaroni salad, roasted veggies on the bbq
Sunday - my mom made gluten free lasagna
Today - Swiss Chalet before we take mom to the airport
Crab curry with rice and potato chips.
The guys have their dinners ready for work today. Spicy thai Chili chicken thighs with rice and broccoli.
chicken, broccoli and red peppers in a healthier Alfredo sauce (made with low fat cream cheese, skim milk etc) served over fettuccine.
meatless monday, for lunch i did a gourmet slice of pizza with feta cheese and black olives
for dinner, i'm finishing off my pot roast which i made on the weekend
dessert is fresh fruit.
sweet potato chicken veggie pie with cole slaw & carrot cake for dessert.

i had planned on roasting a chicken for dinner last night but we had company kinda late and time slipped away so i didnt do it. roasted one this morning, lots of meat for chicken clubs..maybe make some chicken caesar tetrazini tomorrow.. made some chicken & rice soup from the bones. also made a pasta salad with red peppers, carrots, cucumbers, broccoli and celery with a sundried tomato salad dressing. for dinner tonight i made sweet and sour meatballs, mashed potatoes and corn. lots of yummies in the fridge for DH for his dinners @ work.
I made a greman cucumber salad (thinly sliced cucumbers, fresh chopped dill, sour cream, cracked pepper served with spaghetti and homemade spaghetti sauce!
Too hot to cook, so a bonus of having my son work downtown is that I gave him a call to pick up supper on his way home - honey garlic chicken tenders, crunchy DF wings, and fries. Ooops, nothing green! (Is gravy a vegetable?)

been busy with 2 birthdays, my mil and dd. i made butter pecan cake with cream cheese frosting for mil, and vanilla cake with buttercream frosting for dd, all from scratch. whew! next up is dh's birthday in july!
Those Bick's chopped dill pickles are pretty handy for egg and tuna salad, as well as potato and macaroni salad.
Tonight I made chick'n Gardein, mashed potatoes, and a gravy made of sauteed then pureed onions, red peppers, and condensed chicken stock (yep, a gravy made of veggies).
Haven't had to cook a meal since Friday when dh left for the states. He'll be back tonight, probably pretty late so I have decided to roast a chicken this afternoon. Then when he does gets home, I can make him a couple hot chicken sandwiches smothered in gravy and a salad :) plus, I can treat myself to a dinner. It was great not having to do any cooking but I can honestly say I miss a hearty meal.
Last night I decided to try and make salmon patties with a gourmet twist, and they were delish! I added some fresh lime to them and breaded them in panko crumbs. Then I made a creamy white sauce and drizzled it over them. The sauce really complimented the salmon patties. I have one left over for lunch today! :-)
