Watermelon salad?? How do you make it?

lol. I've been the opposite--too lazy to cook but not too lazy to post. muahahaha.
Tonight we had chick pea salad, BBQ pork chops slathered in Bulls-eye sauce (good grief, I could eat that stuff right out of the jar with a spoon!!!), and a tray of pickles and beets and other raw veggies. Standing in front of the BBQ was torture because it's so hot here. We ate outside under the apple tree though and that was kinda nice.
Husband 'cooked', so it was KFC (sorry, body!).
I have a chicken and melon salad
Ingredients
half a melon ( I use a mix of different types of melon, watermelon adds a splash of colour)
2 kiwi fruit
2 tsp prepared mustard ( heat to your taste, I prefer Dijon)
1 tbsp whole grain mustard
2 tsp runny honey
1 tbsp lemon juice or white wine vinegar
5 tbsp olive oil
4 chicken breasts, skinned and boned
1 clove of garlic, crushed
salt and pepper
mixed salad leaves
Method
1) Scoop out seeds and using a melon baller( or spoon)make melon balls.
Peel kiwi fruit cut in half lengthways and slice
2) Make the dressing by combining mustards, honey, lemon juice or white wine vinegar and 2 tbsps of olive oil. Whisk together and season with salt and pepper.
3) Cut chicken in 1cm ( half inch) cubes. Heat remaining oil and fry chicken over moderate heat for 8-10 mins until chicken is browned and tender. Remove from heat and add crushed garlicstir into chicken and season with salt and pepper.
4) Mix chicken, fruit and salad dressing in a large bowl until everything is well coated in the dressing. Taste and season if necesary. Put salad leaves on plate and spoon chicken and fruit mix on to the leaves.
I had these the other day! lolhttp://3.bp.blogspot.com/-BSsz0_2g3f...0/IMG_9838.jpg

Hot dogs with pizza flavoured gold fish crackers. It was pretty good!
Mine is a very simple and refeshing salad. Cut watermelon into bite size pieces (or use a melon baller if you want it to look pretty for company). Place in a large bowl, then I cut feta cheese into bite size chunks and add it to the bowl. Take half a large red onion and slice it into very thin slices and add it to the bowl. Then take a good balsamic vinigar (you can use white or dark) and drizzle it over the bowl, and mix gently. Make sure all the ingredients are really cold, it tastes much better cold than warm. Everyone just loves this salad that I serve it to.
Just a trick, if you either can't afford, or can't find the nice thick balsamic vinigar, buy the inexpensive one and pour it into a small pot. Place the pot on the stove over high heat, once it starts to boil, turn it down to medium and stir often. It will only take about 10 minutes or so and your vinigar will thicken up and the flavours will intensify. Pour it back into the bottle or in a jar, seal tight and keep in the cupboard. It's an great way to not have to spead $15 for a bottle of balsamic vinigar.
I'm going to bbq some chicken tonight. I'll serve it with tinfoil potatoes mixed with veggies, garlic and rosemary. Everything on the Q today :)
i had a very rich chocolate dessert at 10pm... never again!!
i had a restless sleep because of the sugar rush
so pissed, i threw the other square from the fridge in case i ever get that damn urge again
late at night.
MIL is cooking tonight. Impromptu family BBQ at her house. I suspect it will be hamburgers, hot dogs and summer salads on the patio along with great conversation and family. Best of all? I don't have to cook it!!! :)
We had Jane's chicken burgers and pasta salad. It was calling for a hot day so I made it first thing this morning so I wouldn't have to cook in the heat.
I made pork chops in camenbert sauce with fries and veggies.
lunch- left over chicken adobo and meatloaf with rice.
dinner- tuna salad sandwich on foccacia.
Last night was smokies on the BBQ, with potato salad.
Did a taste test - had the free ML naturals ones, as well as the BOGO Grill 'ems. The Maple Leaf ones were WAY better - more flavour, meatier, nicer texture. The Grill 'ems were just okay.
However, our fave smokies still are either Mitchell's or PC ones.
I hear you about hot. The other day it was so stinkin hot I did not want to BBQ and too late to use the slow cooker...so I pulled out my Microwave cookbook and made (Italians look away:yikes:) risotto in the microwave. It was very good and no babying required!!
(Risotto - big tub free - clearing out and had $2.00 peelie coupon, chicken stock free - parmesan cheese giganto block from Costco )
lunch- left over canned beans, veggie wrap and cherries.
Pizza last night(too hot to cook) & left over pizza tonight at work
Sooo hot here tonight, it feels like 40 C (104 F)....just went with mac 'n cheese from the box, as it didn't heat the house much and the heat is making me feel lazy lol. Think tomorrow I'll do some chicken in the microwave (tried this for the first time a week ago and it came out fantastic).
Mr. Freezies. The giant ones. And lots of 'em.
It's too freakin hot to cook and I've got no appetite anyway.

So good! Making pizza again on Monday. The dough's already in the fridge!
Well, like everybody else here in southern Ontario, it's too hot to cook, so we went to the always air-conditioned casino. We both had veggie quesidillas and fries.
dinner - chocolate cherry ice cream
store bought deli mac and cheese
green salad
doritos and salsa
Last night I made two packs of KD, and I thought the colour was a bit dark, so I tasted it and EW - it was disgusting; something obviously 'turned' in the cheese powder. So that got thrown out and I had to start over.
Made a pot of pasta, threw in a can of tuna, and made a garlicky mushroom sauce for it. It was great!
Then we ate half a nectarine custard pie which I made earlier, lol!
It's going to be a wonderfully sunny and warm (26) day here, so I'm just going to do a cesar salad with grilled chicken, and a homemade garlic/cheese bread.
