Oven broiled back ribs with Sweet Baby Ray's! Super juicy, tender and Mmmm!
I made pasta salad with black olives and artichokes from my pizza making night, grated carrots, dill pickles and edamame beans which I found hidden in the back of the freezer.
As for greens, we had steamed brussels sprouts with garlic butter. :)
I cooked the ribs in the mini-oven. Saves energy and doesn't over heat the house!
made sweet and sour pork, first time making it and it was delish
left-overs for tomorrow
better than take-out, cheaper too.
We had roast chicken, pasta, broccoli/carrots and a slice of pumpernickel bread.
Yesterday we had chicken and today we are planing to go out for dinner.
Going to be mr noodle for lunch (I have a cold ugh) and supper will be a bagel since I am working today at the place with no access to a kitchen to make anything more creative.
tonight is going to be a BBQ night... right after we refill the propane tank again (seems like we're forever doing this) so hamburgers and caesar salad. my husband worked 5 days of afternoons this week (home by 3am) and then had to get up this morning to be at work for 8am so i think the kiddies and I will treat him to some ice cream from DQ!
for lunch i did my left over sspork and rice
dinner will be roast chicken with pan gravy
and garlic mash potato with brussell sprouts.
toasted bacon and tomato (from the garden) sandwiches for breakfast
Costco rotisserie chicken with steamed broccoli and a baked potato.
Here's some wings I made for supper! I breaded them to give them a nice little crunch and sauced them with my version of Vodka BBQ sauce!
Ingredients:
1/2 cup Vodka
2 cups Ketchup
1/2 cup Apple Cider Vinegar
1/2 tbsp. Ground Cumin
1/4 tbsp. Garlic Powder
1/2 tbsp. Chili Powder
1/2 tbsp. Cayenne Pepper
2 tbsp Raw Sugar
1 tbsp Kosher Salt
1/2 tsp Freshly minced garlic
1/2 tbsp Liquid smoke
1 tbsp Worcestershire sauce
1 tbsp Soya sauce
2 tbsp Pure Maple syrup
1 tsp Freshly ground pepper
Juice of a fresh Lemon
Mix well and simmer on low for about 15-30 minutes.

I made 2 kinds of cabbage rolls, I used savoy cabbage.
One tray had whole wheat coucous with caramelized onions, roasted red pepper and garlic spice and lemon juice, the other tray had brown rice, cumin, chopped tomatoes, fine herbs, garlic and pepper, both done in the oven with my homemade tomato sauce over it. Shoudl be enough for about 4 meals lol
Well, I finally took those shirataki noodles for a test drive tonight. Wanted to know if they were worth all the hype but had to wait until a night when I was cooking for one...just in case they were a flop. (LOL).
I made a shirataki noodle bake using the tofu shirataki since that's all DH could find at the store. Super glad I did some research on the internet and found out that I should rinse the heck out of them (way more than what the package tells you to do) because that smell that comes off them...ugh...gross. I swear they must package them in fish pee or something. Ewww. The stink!
Anyway, by the time I was done, there wasn't an ounce of that icky odour left on them. I doused them with cayenne, red pepper flakes and chili powder *just in case*...you know, stun the old senses with spice just in case they end of tasting horrible? :rolleyes:
Well, I didn't mind them after all. I really love pasta so if you hope this will be a nice low carb pasta substitute, you will be disappointed. A little too...rubbery to be a perfect replacement. But...at 40 calories for an 8 oz bag of the suckers, well, I could be persuaded to convert.
If only all the asian food marts weren't on the other fricken side of town....
I grilled ribeye steaks...served with baked potatoes, pumpernickel bread and veggie stir-fry. My suppers aren't very creative - you won't see too many casseroles at my house - and the reason being: I have very suspicious children. They are afraid of vegetables that are disguised in any way...you see how many times I serve broccoli?:cheesygrin:
I made veggie sloppy joes, served on toasted garlic bread; pre-made 3-chees stuffed potatoes; lentils; peas & spinach. Easy and yummy.
Last night was Jane's chicken burgers not on buns, oven fries, steamed cauliflower and glazed carrots.
Tonight - as of now, it will be pork meatballs with pasta.
Supper plans amended - son has requested I make my pork mushroom garlic sauce over wagonwheel pasta.
His request is my command, lol! (he doesn't realize it's easy-peasy to make)
I feel lazy today (lol) so I'm planing to slap some hamburgers on the BBQ later on to go with the mexican bean salad and the coleslaw in the fridge.

Ha! I feel lazy everynight LOL. Last night, we were working on a house project and didn't finish until after 10 p.m. A few more chores took us to 10:45. Amy's broc & cheese pies to the rescue (5 mins each in the m/w) and oven fries. Added some frozen veggies for good health and used up the leftover lentils.
Last night my husband made meatballs in a mushroom sauce with rice.

Tonight is chicken parmesan. It's already in the crock pot.
I am really starting to love this crock pot...on the days when I have it together enough at 7am to remember to put something in it, of course. ;)
I did this week's meals on my Saturday/Sunday cook-a-thon.
Breaded pork chops for DS and DH, fried rice, breaded & stuffed chicken breasts ( with Stove Top Stuffing), baked Basa fillets,
container fresh steamed carrots, and some frozen peas to have as sides.
DD and I have lazy Cabbage rolls, shrimp fried rice, GF pasta with a white Alfredo GF vegan sauce!! ( first time used this), GF breaded and baked Basa fillets, baked eggplant with lactose free cheddar/no salt tomato sauce, stuffed red peppers (used quinoa again instead of rice), we also have extra veg in our rice and some steamed too, as sides.
Something great happened again, I wished for help with the peeling/chopping and it was granted! ok I actually had to ask...but still!
hubby's making dinner. it smells good. involves onions, meat.. ??

i've been doing some seaching for some easy dinners and found one for lazy man's cabbage rolls on pinterest. you cook your noodles ahead of time then layer your lasagna with all your goodies and roll up place in dish cover in pasta sauce and bake.
I made Shake & Bake fried chicken with steamed California mix. FIL made rice which complimented my dish although I wasn't in the mood for that tonight.
oh so long haven't been here in this thread, tonight will be falafel in the oven lol , i know sounds weird bec they r usually deep fried, this one is way healthier and taste pretty good too. it's like the one in my avatar!
for lunch i did chinese take- out of lo mein and breaded shrimp
and i'll just stick with fresh fruit for dinner.
