With being down in the dumps I turned to what makes me happy...food. I love to make fancy dishes and tried this one for the first time out of a new cookbook I got called Vegan Brunch.

These are called Chesapeake Tempeh Cakes with a drizzle on top served with local corn, butternut squash and a Sunrise mixture of lemon orzo, sweet potato orzo, rice and mustard seeds. I loved it but DH did not like the consistency of it although he could not elaborate beyond that. Tough for him :)

A special left over meat sauce I made last night. Fresh spaghetti squash to go with it.
It was Sushi tonight from my fave place!
rice+cucumbers+chickpeas (cooked in onion+tomato +other stuff dunno lol)+blueberry yougurt!
Hubby brought back the best general tao chicken i have ever eaten in my life !! :shock:

Tonight we had roast pork tenderloin with various in-season veggies including Patty Pans! They're the little baby squashes that are so tender. Just a quick steam and a little bit of butter and S&P. Kinda makes up for the lousy weather today. :-)
btw what do patty pans look like they sound great :)
Little bright yellow squashes, kinda shaped like a spinning top, 2-4 inches across. Very tender... if you get some, don't over steam them. I bet kids would like them just because of their name! :-)

DS chose dinner tonight, so it will be shake and bake (my own mix) chicken legs, chicken breast for me, instant mashed potatos, fried yellow zucchini, and stovetop stuffing. Comfort food! :)
Fish, Lipton Sidekicks, and cucumber dill salad with a homemade dressing.
Yesterday I cooked up some Korean Kimchi Bokumbap (fried rice) ... tangy and spicy rice with lots of meat, kimchi and veggies. Yum!
Tonight my mom is making chicken fajitas for us, yippeee!
We had homemade subs on multigrain buns grabbbed at a local bakery :)

Tonight will be comfort food, too - by request of my son, my weenies and beans casserole, and I'll make spinach dip baked in a pumpernickel loaf.

Last night was coconut basmati rice and rosemary chicken with a raspberry vineagrette and a shredded salad with green onions, orange bell pepper, and cherry tomatoes. DH had ranch dressing (the FREE stuff form you-know-who) and I had an asian sesame dressing I got from Costco.
Lucky DH, he get's the leftovers for his work lunch :)
