Full turkey supper here too, even when on vacation. Pecan pie with whipped cream for dessert for the adults. I made brownies for the children, also served with whipped cream.
Christmas Day supper was leftovers from Christmas Eve - cabbage rolls, smoked salmon, salad, carrots - plus I fried potatoes, and we had baked ham and garlic sausage.

Last night of course was our christmas dinner. Turkey, ham, stuffing, little mini twice baked potatoes. I don't know how my cousin has the patience to make those all the time lol. and my contribution which were the carrots(brown sugar, honey, molasses, salt, pepper, and walnuts)
The only pics I took were of my carrots,lol and the desserts table. ;)

left over prime rib roast
Leftover turkey, stuffing, mashed potatoes, gravy. I didn't make enough gravy, we used it all tonight!
The old lady across the street gave me a care package this afternoon including days worth of turkey, gravy and mashed potatoes! Yahoo!!!!
had leftover ham from yesterday's dinner, so I made a ham and egg "scromlette" (I cannot flip foods like omlettes, pancakes, etc).
Ha, scromlette. :) I do something like that, I include fried mushrooms/onions/peppers, diced ham and/or bacon, and leftover diced potatoes. Heat the meat and veggies in a frying pan sprayed with cooking spray, then add about a half dozen scrambled eggs. Stir around until it's nearly all cooked, then sprinkle on some cheese and put it in the oven for a bit.
remind me next time, not to make prime rib roast ever again or at least get a smaller cut
but that was the smallest and cheapest, i could get
it turned out a bit stringy
guess i'll be eating that for the next few days until it's gone
what a waste.
Stewing beef is expected to be lean and cooked for a long time, so often cheaper (but I find that stew meat that is already in cubes is more expensive than a cheap steak that will do the same thing, just a little work involved). We don't have Metro here, Sobeys and Superstore are our big chains that I can get to regularly, and I wouldn't buy any kind of roast or steak from either of them. I buy sirloin grilling steaks and sirloin tip roasts (that are VERY big) at Costco. The price is good especially for the roasts, I cut them to a reasonable size and freeze the portions we're not using. Sometimes I cut it into stew meat too, it's about $3 a pound and it's better than what the grocery store can supply IMO. The steaks are a bit more expensive, but 10x better to me. Costco doesn't sell prime rib that I've seen, not sure why that is.

I love that stuff and could eat it every day :P. I used ground turkey this time and it still tastes great!
On Boxing Day, we always have a 'snackie supper' - I made baked spinach dip in pumpernickel, layered cream cheese dip, quiche tarts with ham - and we had sausage, ham, pepperoni, smoked oysters, shrimp ring - all with an assortment of crackers.
No one had room for dessert, so there will be a tray of baking out, along with chocolates.
Sorry for not getting to it sooner ;) Here ya go:
2 Tablespoons oil
1/2lb Ground pork,chicken or turkey
4 Finely chopped green onions
1 Teaspoon each grated Ginger and Garlic
3 1/2 cups Chicken stock
1/4 cup Vineager
1/4 cup Soy Sauce
1/2 Tablespoon Sugar
1 Tablespoon Sambal Olek (crushed chili paste)***RCSS has it in the Asain isle.The one with a green lid
1 Tablespoon Sesame Oil
2 cup cooked spagehetti
2 Cups rough chopped fresh spinach
***OPTIONAL***
1 cup sliced mushrooms or tofu
Heat oil and add meat,onions,garlic and ginger to cook.
Add stock and simmer
add rest of ingriedents and after wilting the spinach EAT :P
I personally always double the recipe ;) and and a pinch or two more of the Sambal Olek cause we like it hot here ;)
This was the Christmas Day menu we prepared...each course served separately but only 6 people to deal with, so not a huge undertaking. We paused between each course, even took a break after the finger food part to open gifts and catch our breath!.
I think we will have to start brainstorming right away to top this menu for next year. We have absolutely loved going NON traditional 2 years in a row for this meal. So many turkey dinners all look the same after many years, this has ignited the fun again for DH and I.

slow simmered broth with turkey, slender diced shallots, grape tomatoes, tender snow peas and festive butternut squash cutouts Served with crisp breadsticks
Traditional Tourtiere
single pastry pies filled with hints of savory and thyme, ground pork, onions, mushrooms, and organic rolled oats surrounded with gravy juices Served with Baco Noir wine, vintage 2008
Comfort Stew
a hearty bowl with mouthfulls of delicate chicken breast, accompanied by colourful sweet corn, baby peas and carrots, nestled amongst tender gnocchi and coated with a white parmesan sauce
Served with a side of baby cucumber and avacado salad
Finger Foods
for our guests desiring seafood, a tantalizing array of various bites, including crab cakes, seared tiger shrimp, and sauteed scallops in garlic butter, with sweet thai chili sauce and lemon wedge
For the traditionalists, medallions of lightly breaded chicken breasts with zingy bbq dip
Both are served with individual homemade califonia rolls and palette pleasing fresh melon balls on a nest of shredded carrot
Cornish Hen with all the fixins
A platter of roasted hens with 2 variations of glaze, coffee-liquor or an orange-glaze, each stuffed with orange slices, cranberries, chestnuts, seedless green grapes, and seasoned with fresh sage and tarragon leaves.
Served with sides of both gourmet mini roasted potatoes and mashed, baby carrots with pecans, cashews, cranberries and organic ginger maple syrup, steamed green beans, broccoli and tri colour peppers, traditional bread dressing and baked butternut squash
Served with choice of Australian wine, shiraz or cabernet sauvignon

^^ Yes ....and No...meaning so much of it was prepared ahead, and I had DH's help and his excitement in wanting just the right dishes and cutlery that everything was brought out on. Like I said, it is a new tradition we hope to continue.
I just type up a silly fancy menu to make fun of the way fancy restaurants describe their dishes. Gets a laugh from the family.

I am sick with a bad cold and have barrely energy to cook...so Frozen dinner ..And in my blanket tonight.
Subway offered a free 6 inch sub if I bought a $25 gift card. That is a good deal!! So I had a 6 inch ham sub and made a plate of peas and carrots to go with it. Yahoo!!!

I made farfalle with roasted EB peppers, onions and a rose sauce that I made mixing thick n rich with some creamo. Not too shabby.
I am looking at making some sweet potato fries later today. Last time I made them they were nice and crispy because I slow roasted them. Hopefully I can succeed again. Might also make pecan tarts.
Yesterday, we had takeout pizza from our favourite place - we get it every few months. Five dollar coupon helps, but their prices just went up. Bonus was our pick-up card was full so we got two medium pizzas free as well as the x-larges we ordered. So, it's pizza again tonight!
