We went out for a day of shopping so we went out to dinner. Went to Pizza Hut and did their Platter - Boneless Chicken Wings, Potato Wedges, and Pizza Rolls with a family size Caesar Salad, which was shared between me and mom.
PIZZA!! Pepperoni, mushrooms, pineapple, bacon & 1/2 black olives. And I put some Olymel Chicken Wings in the oven (the breaded crispy) I like them dunked in Honey Mustard or Ranch dressing.

We have a real blizzard going on here but we took steaks out to barbecue anyway!!! Can't let a little snow and wind stop us! Making a light version of stuffed baked potatoes and a salad to go with the steaks. Garlic toast for the non dieters..I miss toast .
I am solo tonight, so will prob just pour up a glass of cold, crisp Chardonnay, make a plate of Nacho's and put on a movie (one that I have prob seen 5 times already! LOL)

Just some cheddar cheese and an Asian apple pear.
Tonight was Eggplant Parm (to use up the clearance eggplants I got) with pasta and Naan (also on clearance)
Last night was a win/lose. Made the turkey bacon from the FPC - OY, it was absolutely horrible, not even the cats would eat it!
However, the Irish potato patties were a hit (mashed potatoes and peas, coated in cornflake crumbs and fried), and we had a salad with it.
After supper, son said he was glad there was salad left over so he could take some to work. He asked what it was called.... saw me struggling to come up with a name, and he said "Just Mom's salad, right?" - well, I guess... that happens all the time, I make something with no name... It was a salad with lettuce, cauliflower, cucumber - I made a sweet mayo dressing and added chopped eggs, so it's all creamy.
On Saturday I baked banana chocolate chip muffins. I bought 4 bananas for 50% off at NF to bake with.
Last night I made turkey pot pie stew with fresh biscuits. I made peas into baby food for LO. He had peas with roasted chicken for supper last night for the first time. He liked it, but didn't look so sure about the texture.

After a munchy type of weekend, I feel like meat and potatoes tonight. I am solo again but I am going to throw some pork chops on the BBQ and have some type of potato (I liked them baked in the oven the best) so maybe do that and bake something else at the same to make use of the oven.
for lunch, i did left over beef stew with rice
dinner will be left-over curry chicken thighs and stir fry bok choy
I gave up on the BBQ as we ended up with a mini blizzard this evening. So as per hubby's request (he will eat later) I made one of his fav. meals.
Take some pork chops, season with salt & pepper, brown on both sides in a frying pan (an electric frying pan works great here, or any deep fry pan with a lid) then add a layer of thinly sliced sweet onion and today I added sliced mushrooms (could also add green beans or other veg) and then top with thinly sliced potatoes (make sure to season each layer) Add a little water to the pan (or you could be inventive and add stock or other liquid) bring to a boil, turn to med-low. Cover and simmer for about 20 mins or so. Then flip the chops on top and let the potatoes cook on the bottom (let the water burn off and crisp up the potatoes a little). I still keep it semi-covered not to dry out the chops (and you may need to add a bit more water if you think its burning or sticking. Then DH likes to slatter the cooked potato & onion with creamed corn. LOL
Had my curried lentil stew-because I could not locate the recipe page, I think I did not get enough curry powder into the pot. Edible but not as tasty as usual.
I did organize my Food & Drink recipe pages into categories today (mostly; some recipe pages have a dessert and main course together so such pages went into main course) because I want to find certain dishes more quickly instead of thumbing through all pages until I see the one I want!
last night was homemade tacos...it's one of the only meals my 2 kids can't wait to eat. tonight i'm making it simple (not feeling so hot today and the 2 kiddos seem to have colds) soup & sandwich.
Last night's supper was 'leftovers soup' - rice with mushrooms, onions, carrots, cauliflower; added some macaroni, used Vegeta for broth; main meal was roasted porkchops with potatoes, onions, and carrots.
