Tonights choices are:
Butter chicken, butter chickpeas :P, turkey chilli, or Indian meatballs with a curry sauce and of course a big beautifully healthy green salad with some yummy strawberries on top :P
or I might just tell DH to take a bowl of cereal if my back doesn't feel better by dinner.
Nothing gourmet for me tonight...it's looking like chicken wieners with perogies and mixed veggies...I don't have any meat left in the house and have to work tonight so really not into cooking.
well the others will be taken care of with leftovers.
i don;t want to cook, i am so not in the mood (never am, really)
i want to be the one that galavants all day and then comes home to ask 'what's for dinner' and then have the audacity to wrinkle my nose when it isn't my favouritest thing ever!
that would be nice ;)
For supper tonight it was...Dairy Queen. It's DS's seventh birthday, and as a typical kid of this age, the meal of his dreams is not one that I cook! :) Although I must say he does love my meatloaf and burgers.
For tomorrow's meal, I have chicken thighs in the crockpot (with bones, no skin) with a bit of taco seasoning, salsa, mushrooms, onions and peppers. My idea is I'm going to make enchilada type things tomorrow. It's really easy to take the bones out of cooked thighs, then I'll shred the chicken, put it in some tortillas with some refried beans and some of the veggies, roll it up, top with the other juices (might need to thicken it up a bit), bake in the oven, top with a bit of cheese.

last night was pizza and caesar salad. as for tonight...i think spaghetti and meatballs, garlic bread. i did 3 big grocery shops last week for our company for easter weekend that i don't have the energy to go back to the grocery store this week so it's just a matter of using up what's left in the fridge.
I have no idea what I will have tonight..lol...will have to keep an eye here for inspiration and ideas; I am tired of cooking..lol...maybe pasta?
Last night I sliced potatoes in half and put them cut side down on a cookie sheet that was lightly greased with red palm oil (supposed to be even healthier than coconut oil). When they were almost done I flipped them over and sprinkled them with seasoning salt. Boiled some cauliflower and had leftover roast ham with it. Don't forget the glass of milk and some mustard. :)
Tonight I am making Taco soup. Something different and I am quite excited!
Tonight will be French omelettes with lots of veggies with a side of fruit salad,and hash-browns for the non dieters.
Tonight is dd's birthday so it's her favorite pulled pork on my homemade pretzel buns, with slaw and of coarse b-day cake. I put the pork shoulder on early this morning and I can already smell it :)
Fasting day so supper will be homemade soup - the holy trinity, plus potatoes, leftover rice, and maybe barley; egg salad sandwiches to go with.

Spaghetti Squash with Avocado “Cream” & Cashew “Cheeze” Sauce
Something like enchiladas. I cooked some skinless chicken thighs in the crockpot last night, with onions, mushrooms, peppers, taco seasoning and a bit of salsa. When I got home today I removed the bones from the chicken and shredded it, warmed it up. Got a can of refried beans, spread it on tortillas, then topped with the chicken/veggie mixture, rolled them up and put it in the oven with salsa and cheese on top.
Editing to say, they're a big hit. Even DS loves them - if he knew all the mushrooms and onions that were in there, he wouldn't touch 'em with a ten foot pole! LOL. I cooked them in the crockpot with the chicken, the texture of them is cooked away.

Portabello Burgers and Homemade Wedges
I made turkey soup as part of supper last night, along with turkey leftovers...I knew I couldn't get the family to eat any more turkey tonight, so I made steak, baked potatoes, panfried mushrooms and peas 'n carrots. I had one disk of pie pastry left from pie making this weekend, so used it to make Chocolate Silk Pie.

Not my pic, but this is what I cooked. I was craving traditional Filipino breakfast for dinner Lol. It's cured sausage with garlic fried rice topped with a sunny side up egg.

I have no appetite but I'm going to keep busy this afternoon and probably bake off some chicken parts and make some homemade bread, then I'll make hot chicken sammies for the family along with some smashed potatoes or fries with gravy, not totally sure yet. And of coarse left over b-day cake for the family for dessert.

I'm just sitting down to breakfast. I fried an omelet in red palm oil (supposed to be healthier than coconut oil). It tastes really good! I made it with 2 eggs, milk, roast ham, onion powder and marble cheese. Having that with a toasted bagel and glass of milk. yum
