Its just me tonight but DH bbq'd some chicken before he left for work--if you want to try an easy, flavourful recipe try this one:
take some chicken thighs (bone-in) remove the skin, score an X in the meat, put in a big bowl , sprinkle with S & P and garlic powder, coat with ketchup, mix all together, then sprinkle with chopped green onion, marinate overnight or for several hours and then bqq as normal--it tastes amazing (hard to believe) I went to a pot luck bbq several years ago and a lady made this and I had to ask for the recipe and couldn't believe how simple it was. I have tried experimenting with different sauces, bbq sauces, etc but ketchup works best..lol..
Thanks for spending the time to write the recipe out! I'll definitely have to make this, with or without left over BBQ pork. lol
Maybe even vegan too, sans the shiitake mushrooms as the bf hates them. Boo.
The toughest part is keeping the noodles dry! Some restraunts can't even do that! :D Yours looks really tasty.
I ended up doing ground chicken with stir fry veggies and taco seasoning in a pita with cheese, lettuce, and salsa...So sort of a cross between a taco and a fajita LOL!
I have a massive headache so it's gonna be hashbrown waffles and scrambled eggs tonight :)
dh requested cheese stuffed tortalini so i made that with a rosee sauce. it was really quite good if i do say so myself. stuffed chicken breast, caesar salad and homemade biscuits to go with it.

Well, yesterday, I stupidly couldn't resist the lure of making a full roast chicken dinner -and am paying for it now, so I won't be doing that again. I thought I was taking things slowly, but it was hell on this ole hurt back later in the evening and overnight.
So, supper today is whatever... frankly, I don't care. I'm not making it, so it's whatever can be done from the freezer, or what son/husband can put together.
Last night was hot dogs with baby cucumbers & carrot stick with a few kettle cooked potato chips. Not what I had planned, last night was supposed to be tortellini in Florentine (sp??) sauce with salad and garlic buns, but mom ended up covering someone at work last minute so dinner became something quick and easy.
I took out ground chicken and was planning on grilling burgers but looks like rain, so instead I might just make my Chicken Parm Pizza
sweet and sour meatballs, white rice and some broccoli. have a PTA meeting tonight so it needs to be kind of easy.

Tomorrow I am planning on MEXICAN :P:P:P I plan on making ceviche rojo de camaron with snapper and bay shrimp :P, carnitas with homemade tortillas if MIL has made them ;), salsa and guac and finally either a drunken plantain(if I can find them) or just fruit ;)
As for tonight I hope the chix thighs will be defrosted and then I'll make grilled sweet and sticky chix thighs from RR http://www.rachaelrayshow.com/food/r...harissa/print/ with rice and a salad.
I did a crockpot lentil spinach and onion soup that ended up as stew...Too many lentils because I didn't measure LOL! Still really good, but wish I had room to add potatoes and carrots now that it's more stew like!
Lasagne (frozen) with baby carrots. Was feeling lazy tonight.
Last night, husband had leftover roast chicken, potatoes, and carrots - and then supplemented it with like four salami sandwiches, lol! (yes, he has hollow legs...)
My son made grilled sammies for the two of us, and wow, were they good! Montreal smoked meat on french bread, with potato salad (yay for good deli salads!).
Tonight's meal is as of yet a mystery....
Just me tonight, I have some homemade turkey soup poked away in the freezer, so will probably just take that out.
Last night I made soft tacos and mexican rice, with a salad.
Tonight I am making perogies, with restaurant style sour cream (yum - major guilt!) shredded cheese, and also a salad.
I've moved for work last week and my fiance is still back home... who the heck knows what he is cooking up - can you say major amounts of takeout!

The haddock was frozen, but I did fry the potatoes myself :)
Sticky sweet bbq'd chicken thighs over spiced tomato rice and grilled balsamic asparagus on the side.

Chicken breasts chopped up, cooked with veggies (onion, celery, broccoli, canned baby corn), with home made sauce and served on a bed of no yolk noodles with a glass of milk. Pretty yummy
