Baked chipolte chicken breasts with steamed veggies and rice. For dessert, I made cafe au lait puddings. I saw the recipe in Gourmet magazine and really wanted to try it. I hope it tastes as good as it looks!

I am sooooo full! It turned out really well. I definitely recommend this recipe if you like coffee flavour. Here's the recipe:
Cafe au Lait Pudding
- 2 cups whole milk
- 3 tablespoons instant coffee granules
- 2 tablespoons plus 2 teaspoon cornstarch
- 1/4 cup plus 2 tablespoon sugar, divided
- 1/2 cup heavy cream
- 1/4 teaspoon pure vanilla extract
- Cinnamon for sprinkling
Whisk together milk, coffee granules, cornstarch, 1/4 cup sugar, and a small pinch of salt in a heavy medium saucepan. Bring to a boil over medium heat, stirring occasionally, then boil 1 minute, stirring constantly. Transfer to a metal bowl set in an ice bath and cool, stirring often, about 10 minutes. Pour into cups or ramekins and chill, uncovered, 20 minutes.
Beat cream with vanilla and remaining 2 tablespoon sugar using an electric mixer just until soft peaks form. Spoon whipped cream onto puddings and dust cream lightly with cinnamon.

Tonight was a salad with sliced tomatoes, sliced sweet onions,sliced boccochini with a creamy dressing drizzled over and crumbled blue cheese, mashed potatoes and roast with honey and balsamic glazed carrots and the most yummy homemade gravy ever! Oh, and pumpkin pie with whipped cream for dessert! I am stuffed!

Last night was basmati rice, EB veg and my version of Chicken Parm. It's just chicken breasts coated in crushed corn flakes with italian seasoning that is baked i the oven on a wire rack and topped with pasta sauce and mozza cheese. I had to sub pizza sauce since I was all out of pasta sauce!. It was super yummy!
No clue about tonight though????
DH is doing rib steaks on the grill with baked spuds...mmmm!

Last night we went to Chilis in Vaughn...sooo good!
We startd with the spinach and artichoke dip, then I had the crispy fingers tossed in a honey chipoltle sauce with cool ranch dressing and corn on the cob. And bf had the Smokehouse Jalepeno cheese burger, it was all so yummy!!!!
Tonight not so sure..heading to my neices Bday.
