... A long day of driving meant an easy dinner- pasta with sauce and cheeses, and garlic asparagus. And leftover ice cream cake.
Dh BBQ'd burgers. Ate them on kaiser buns ($1 for 6pk @ Sobeys). Reiser's potato & macaroni salads ($1 each from CO-OP, Raincheck & $1 coupons). Bagged coleslaw (CO-OP $1.24 after sale & $0.35 coupon). Pretty happy with that and we have leftovers.

Last night was baked pork loin chops in mushroom sauce, baked rice for the sauce to go over, along with sauteed veggies - mushrooms, onions, celery, and carrots.
Tonight - YAY to Sobey's for having top sirloin on at a decent price, so it's going to be BBQ with packet potatoes, and coleslaw.
Last night was bbq chicken, rice, coleslaw and broccoli. Tonight we are having chicken stirfry (clean up the fridge night!!)

I made a lasagna this afternoon. 1/2 meat/cottage cheese mix and the other half just cheese and sauce (for kids). enough for leftovers for dh to take in his dinner this week.
i have enough chicken and lasagne to last me a week!

I've never made it before..it was a search the web for something different.
I am trying something new. I cook without a recipe all the time. I have chicken breasts in a small roasting pan with a fruit sauce (2 fresh peaches, 1 fresh nectarine, 3 dried apricots, brown sugar, dehydrated onions, 6 cut up roasted garlic cloves, a little Worcestershire sauce, lemon juice, russian salad dressing, corn starch). Rice is cooking in a pot. I am thinking about pureeing the fruit mixture after the chicken is done cooking so that it will be a nice sauce for the rice. Having coleslaw with it. :)
edit: it turned out even better than I had hoped. That sauce was YUMMY

Last night was roasted potatoes along with brussel sprouts, steamed mini carrots and yellow and green zucchini sauteed in a thai red chili sauce and a big green leaf lettuce salad with tomatoes and cucumbers.

Tonight will be either salmon or stuffed chicken breast with a stuffed potato, and mixed veggies.
Last night I grilled some BLSL chick thighs with some of the Red Robins seasoning mix and fresh squeezed lemon and added them to some ritoni I cooked and tossed with Kraft herb and garlic cream cheese, parm shavings and my homegrown fresh basil. DH loved it :)
Tonight will be BBQ steak and salmon, stir fried veggies and either brown rice or potato with that.

Had a raincheck for a warehouse pack of chicken thighs, so I roasted them with onions, carrots, and celery, and used the juices and veggies over rice.
Well, I thought it would make two meals of the chicken - but no, didn't work out that way.
There were 12 and now there are three left after supper.
Actually, it's a good thing, since my husband hasn't eaten his usual big meals lately (he's gone down to 'skinny', whereas I used to call him 'lean'). He only eats one meal a day, so I try make it a good one!
Last night I cooked chicken breasts with green onion from the garden, canned mushrooms, Philadelphia 4 cheese cooking cream, Philadelphia cream cheese, milk, and Parmesan cheese that I served with spaghetti. I had a glass of milk with it.
Tonight I am making a meat sauce to go with nachos. I'll melt marble cheese over the taco chips in the oven. Have that wit sour cream and salsa. I always have a glass of milk with my meals.

I am on vacation now in NFLD and have been eating seafood since I hit NB...I have had so much, might grow fins..overall I have had cod (off course!!) seafood chowder, lobster, clams, haddock, scallops, grilled salmon, mussels, and it was all delicious!!! So what 's for dinner today?? I might try chicken!! ha ha
Tonight will be ribs on the bbq with salad and perogies maybe. Haven't thought that far yet. Maybe fries too for those that want them.

I'm going to try recreating a stir fry I had at a cafe in what i can only think to call an upscale grocery store, specializing in produce. Anyhow, it was all kinds of veggies, ginger, garlic, chicken, rice noodles in satay sauce.
