DH won't be home for supper tonight, so I'm leaning towards macaroni with tomatos and parmesan cheese and garlic toast. He's not big on meatless meals...or macaroni and tomatos (something my Dad would always make when I was a kid)...so we enjoy it when he's not home!

Tonight was homemade pizza on the bbq! I bought the pizza dough and grilled it on the bbq and then topped it with shredded bbq chicken(from safeway)mixed with bullseye bbq sauce(guiness flavor)red onions, cherry tomatos, and mozza cheese. I heated in on the bbq until melted. Yummmmm! Oh, and a glass of red wine to wash it down with

A trip to Crampton's Market and a visit from my parents yielded me some nice local veggies. I got an eggplant, tomato, red pepper, zucchini, cucumber and red onion. I sliced everything up and roasted it, added some fresh red pepper hummus, sliced up some fresh ciabatta bread and came up with the following creation:

Plus, there are those of us who eat/cook several meatless meals a week, so this is a great place for ideas for us, too!

That's true, I am meeting more and more people who aren't full-blown vegetarians but they have some meatless meals every week just for variety

I made some turkey meatballs in portabella mushroom sauce. Served with leftover mashed potatoes and a garden salad, perfect for a rainy evening.

By my count, of course!! In our family we also make sure something like that is supplemented by Vitamin CH! (choose your favourite bar!)

Last night's supper, sausage patties and cheese on hotdog buns (because the patties fried up oval and shrunk a lot, and two of them fit on the hotdog buns perfectly), with oven fries.
Tonight, cannelloni (Safeway frozen, on sale, will try it!), leftover baked ham, salad, garlic buns.

    Tonight we had this:

Beets in a creamy dijon sauce (just soy milk, stock and dijon mustard). I use to hate beets..full out hate them but I have grown to love them. This recipe would make anyone love beets. The dijon mustard compliments the sweetness of the beets. Local green beans, rice with onions and Gardein veggie BBQ Skewers on the side. I am not a big person to eat "mock meats" but these were actually pretty decent and even better they were free
