I did A LOT of cooking yesterday; and it all turned out awesome and it's now packed away in the freezer so that when I go to the cabin again I will have lots of delicious food ready to eat (and I can concentrate on important things like poker)...no cooking for me today; either sandwiches or I'm going to my grandmother's for dinner..LOL
Lasagna and salad courtesy of the school chef. Which means I can goof off instead of preparing dinner!
No plan for tonight. We had chicken and pork chops the past 2 nights. Hockey game tonight. So will maybe treat my boys to DQ dinner I think.
We still have some left over ham from the other night but i dont want to eat ham tonight. And it has to be something easy because i have sore wrists. So it will be hot dogs tonight with relish, mustard, chopped onions and kraft singles. And hubby is slicing some celery and red peppers to Munch on with the dogs. I was looking to buy some perogies but couldnt find any at Maxi or Metro.
I found this recipe for country salsbury steak in my e-mail. We have the ingredients (or close enough variations of them), so I pulled out ground been and we will either have it tonight or tomorrow. Just depends how much time I have.

For lunch today I cooked spaghettini with shrimp alfredo. (alfredo sauce, shrimp, fresh mushrooms, a bit of green onion). It is quite tasty.
I am thinking of something like this
meatballs and bowtie pasta since that's the only shape dd2 likes (!?!). garden salad on the side with lots of cucumbers.
Lol, shapes matter to me, too. Husband does not understand! I love shells, bowties, and wagon wheels!
Supper tonight... Pork loin chops in oven baking in a garlic and onion sauce, which will go over leftover pasta. Salad to go with, and corn for me.
Ate one of those VH Steamer things, the picture on the packaging looked considerably better than the contents tasted. Yikes, I need to cook from scratch more.
We ended up with pizza for dinner and pizza for dessert:P
I made a pizza with peanut butter( it kinda melted on the pre cooked pizza shell) sliced bananas, drizzled with Nutella and sprinkled with unsweetened coconut :) super yummy :)
Going to the cabin this evening, so I have lots of food made already, so load up the sled and go for a couple of days. I have a couple of new recipes to try when I'm there i.e. chicken pieces marinated in peanut butter & spices, etc battered & then deep fried (?) have to try it...and a swiss steak recipe done on top of the woodstove in a piece of aluminum foil...:excited:

Today I'm making homemade pizzas, son is coming for supper and it's one of his faves.
It's mostly meats for the men - pepperoni, salami, ground pork, ham, onions, and mozza.
last night was frozen pizza. it was pretty good. I recently bought the dr oetker panabello pizzas and they were pretty tasty so we had that. tonight I don't really know. dd1 is sick with the flu and dd2 has a nasty cold so I'm thinking soup
I went out to lunch today, a Chinese restaurant that is reasonably priced but has GIANT portions. When my Mom was in the hospital it wasn't far, I would get two meals for her, DH and myself for supper and it would feed three of us easily (DS doesn't like Chinese food).
I took it back to work and restrained myself, ate only half and was grateful I did, I was really stuffed and falling asleep by afternoon. I'm still not hungry tonight, so DH had my Chinese leftovers, DS had the pork chops from the crockpot on egg noodles. I think that I will not cook those all day in the crockpot again (10 hours), they were overcooked even though I started them from frozen. Sometimes I cook things overnight when they need shorter cooking time. I find that chicken especially can get overcooked in the crockpot, thighs are much more forgiving than breasts though.
I find myself getting really bored lately with what I cook. I'd love to be able to make something like this ginger beef I had for lunch, but without opening a bunch of jars of sauce and such, make it somewhat healthy and less processed. I need some new recipes!

I'm in a bit of a pickle. I just worked all day and an beyond exhausted but MIL invited us for dinner. I really like the idea of not cooking but reeeeeeeeeeally don't want to go out anywhere........ What to do......what to do?????
I had a job interview this afternoon. It went good. It could be weeks before I hear back.
I made stroganoff hamburger helper (tinkered with the spices/sauce), freshly boiled carrots with real butter and a glass of milk.
Wanted to add a note about what I did with my homemade pizza - something I hadn't tried before, but surely would do again. The night before, I had roasted six heads of garlic, squished it out and mashed it with a bit of oil. Thought I would use it in mashed potatoes or something.
But after I patted out the dough for the pizzas, I remembered the garlic, so decided to try it on them. I had made three, so spread out the equivalent of two heads on each, on the dough before I put on the sauce.
Well, it was awesome! Added just a new level to the pizza's taste!
So I ended up going to the in laws and helped MIL make Risotto alla Milanese ( with saffron infused stock and Parmesan cheese) OMG! It was simply delish. MIL also made osso bucco to serve with it. Wow! I'm sooooooo glad I went ;)
i made chicken adobo and will make broccoli with rice to go with it.

I have pizza dough in the bread machine, rising now. Going to top with veggies and some sausage patties I made this afternoon.
Want to hear something ironic?? I spent all that time earlier in the week making food for the cabin..so I went Thursday & Friday night, and yesterday evening/last night a bunch of us got stranded at a cabin about 15mins from my cabin. It was so stormy, complete white-out, too dangerous for snowmobiling in the country, etc we had to stay put..so we ended up with all the yummy food at my cabin and we ended up having for dinner Stove Top & Lipton-cup-a soup (luckily that was in the cupboards) LOL. Too funny!!!
