Tonight I am making jerk pork tenderloin with stuffed potatoes (which I made this morning) and broccoli. I'm hungry too, but got another 3 hours before supper. Time for a snack.

I had a combo meal from a German place - schnitzel, sausage, spaetzle, and sauerkraut - it was awesome. Husband had dry ribs and bread (yeah, I know!).

Man I need to stop coming in here in the a.m before lunch when I'm the most hungry
Tonight we're having Breakfast for dinner (minus the bacon) because I might have forgotten the bacon.. M&Ms were out of the meatballs so I picked them up FINALLY just yesterday (rainchecks!)

Hey me too, breakfast for dinner. I went out this morning and forgot to take something out of the freezer, when I got home one of my grandsons came over with DD, I had to babysit him this afternoon, again forgot to get something out, and I hate defrosting stuff in the microwave. Sooooo...bacon, eggs, hashbrowns (and toast for dh)
Quick, easy, and really, what in this world is better than BACON (well cheese is a close second).

We had Kurzeme Stroganoff which is a Latvian Pork dish. It turned out pretty good.
This recipie was close to what dh's Momma used to make, but she never used beef stock. Lots of fresh ground pepper & served it with egg noodles.
Kurzeme stroganoff
(Kurzeme strooganov)
Serves 4 to 5
400-500 g pork, cut into this strips (stir-fry pieces are excellent)
1 large onion, chopped
50 g smoked bacon, cut into small pieces
1 pickled cucumber
1 Tbsp plain flour
a cup or a-cup-and-a-half of hot beef stock
100 g sour cream or creme fraiche
salt and black pepper
fresh parsley, chopped (optional)
On a hot pan, fry the bacon until golden, then add the onion and pork and fry until the meat changes colour (remember, Kurzeme stroganoff is a light sauce, so there's no need to achieve a perfect Maillard reaction here and brown the meat all over).
Stir in the flour, cook for a minute or two, then add the hot stock. Simmer on moderate heat until the meat is cooked (the cooking time depends on the cut you use - pork loin cooks very quickly, obviously).
Cut the cucumber into thin strips, add to the sauce along with the sour cream. Simmer for another minute or two, then season to taste and serve.

Pasta and tuna in mushroom sauce, with lots of butter and garlic; served with garlic toast. (My son accused me of preventing him from going out on the town later, lol!)
