Was supposed to be BBQ chicken but both of us had lunch late so dinner was too late to BBQ so quick and easy nachos instead.
Had our friends over for dinner so DH made his special BBQ chicken, corn on the cob, potatoes, ceasar salad, fresh fruit and ice cream bars for dessert-prettty sure we convered all the food groups and then some-oh and a glass of wine of course.
Sunday I sprinkled plenty of dried herbs all over a chicken and roasted that, at the same time seared/browned 3 decent sized blade steaks with loads of onion into my double handled oblong cast iron skillet. Sharing the oven space was a juggle but these did not take long to cook up tender and the chicken crisp.
Thought I'd cook up the sides when DH and I got back from errands, so we told both kids if they were hungry there was some stuff on the stove, too hot to put away just yet.
When we got back all the steak was gone!! The pan with some juices was there, I was shocked that 2 kids could wipe out that pan full so fast! DH and I had not even had a taste of it as yet.
Turned out DS wrapped everything up to refrigerate it, but stuck the steak in another fridge.
Whew!
Making cabbage rolls, eating some and freezing the rest. :)

Last night, I had about six squares of chocolate bar around 10 p.m. - guess that counts as supper, since it's all I had.
Tonight, roasted chicken pieces, along with onions, carrots, potatoes, and a salad.

Just got LO down for a nap. Today is the coolest day in the forecast, so I'm going to do some baking. Going to bake various fruit muffins and freeze some of them. I am taking care of some other children part-time over the summer, so I want to freeze and be able to pull out other muffins as needed. Might as well stick something in the oven for supper while I'm at it. This will be the only afternoon this weekend that it's just LO and I. :) Busy is good.
I just remembered that I was going to make a chicken and vegetable stir-fry with egg noodles. I'm going to toss the chicken breasts on a cookie sheet in the oven, that way they can cook while the muffins are baking.
Chicken in Chicken gravy, with onions and mushrooms over mashed potatoes, so craving mashed potatoes and had some chicken to use up.
We had barbecued hot dogs and hamburgers
My DD's birthday today so no cooking. We are taking her out for supper tonight. :)
Really trying to clean out the freezers so will be planning our meals tonight for the next few days. See what I can prep tonight. Burgers for sure as I still have a whack of beef to use up that we got on sale (clearance)

I had a bowl of Mr. Noodles soup, he had some too.
Not sure if I can stomach anything else. Not sick, just don't feel like anything.
I know it was wrong to eat just 2 times today, but I got busy with the painting and reno stuff and forgot till I was famished. Both times I just reheated and woofed down that GF lasagna. Sure hit the spot though.
Tomorrow night we are joining a couple of friends for wings at 7pm. We will have a veggie snack at home because we will be hungry earlier than that, which is the time that works for the other couple. Haven't gotten to see them in quite a while, and they love our LO.
It's going to be warm today. So I think deli meat sub sandwiches and a salad will be on the supper menu.
It's been DAYS since I've been able to cook a decent dinner...it's cool out today so I'm baking a small beef roast, mashed potatoes, carrots, corn, stove top, etc and making an apple crisp :)

Too hot but had to cook - so made breaded seasoned pork bites in the oven; bowtie pasta with sauteed onions, mushrooms, and carrots; and a salad.
Tonight was bison burgers, romaine hearts for a salad and a buffalo style macaroni salad :)
dug out the last two Panabello pizzas from the deep freeze, I cannot even remember when I got these for free, but I do remember raspberry gingerale being involved in the deal?? And I was still working then! lol. Thought I could fool DD into eating them by covering the goat's cheese over with some extra turkey pepperoni....no go, I discovered a pile of toppings she had picked off after my nap! Made a few homemade burgers for the guys to have after work and for tomorrow but Friday it will be back to the drawing board for me. Time to search my recipes for something new I have not made in a while.
Had lasagna with sausage, ground beef and cheese.
Just put a beef roast in the oven before it gets too warm. Going to have mashed potatoes and veggies with it later. :)
I have some chicken pieces marinating (dark meat works best, remove the skin, score the meat (X) put in a bowl and mix with S&P, garlic powder, any other spices, ketchup and green onion) marinade all day and then bbq..I use this recipe a lot and it's amazing!!! Depending on what time I get to cook it will prob have corn on the cob and either a potato packet or a nuked potato...I also have this REALLY fresh garlic bread stick, so wouldn't mind grilling some of that as well...
Last two night have been leftover free pizza from the weekend, we had a free pizza to cash in with the local pizza shop so only had to pay for the sides we ordered. Than the last two nights I have been on the go after work Tuesday kitchen needed to be cleaned and fruits cleaned and chopped last night I had to grocery shop so both nights just threw a couple slices in the oven to heat up and dinner was ready. Not the best meal but better than eating out again.
Tonight not sure yet nothing to do after work and mom is home so maybe BBQ something, will see what she thinks when she texts me later to ask what I want for dinner (she hates choosing).

oh my!! I pulled out all the stops and made a very large pan ( talking large roast pan ) full of beef stew, then removed enough of it to a separate pot to make my own GF dumplings in, still was plenty left to make 13 fairly big regular dumplings for the brood here. That should hold them!!
Chinese food from the mall. SO full. Husband went and ordered way too much in the combo meals, so we have supper tomorrow, too!
