Angela, it's awfully hot, isn't it. I dream of a/c and SNOW!!!
No cooking tonight, too hot. Plus we had a bad day with news of my husband's mom being very ill.
Husband chose KFC for supper. (burp!)

Making some spicy chicken legs, mashed potatoes and veggies tonight. :)
Last night I did a pasta bake with a lasagna twist. I did the pasta the way I normally do mix a homemade meat sauce (added mushrooms as I had a container to use up) with the pasta and than I layers it in the pan with layers of cottage cheese and mozzarella like you would a lasagna. It was quite good and a great comfort meal on a cold night. Also made a garlic bun to go with it, just cannot eat pasta without garlic bread.
No cooking tonight, will be at a friend's place for supper and a card game. Have a great weekend everyone:)
I made quinoa/kale patties yesterday. Had the leftover cooked quinoa with blueberries, brown sugar, milk and cinnamon for breakfast. Good and healthy comfort food. Will do it again.
Do you have the recipie for the patties? Sounds delish and healthy!
My taste buds remain totally out of whack.
I really like the sounds of SassyAshley's pasta bake.
I think tonight we'll have French Onion Soup & Spinach Salad. I love when someone else is making dinner. It is Dh's turn to be the cook tonight.
Sorry about your husbands Mom Natalka. Take care all
Tonight will be more leftovers.
We have a couple friends coming over tomorrow for a bbq. It's been very hot all week, but they are now suddenly forecasting rain. I dug some potatoes from the garden today because that is part of tomorrow's supper menu. Some of the potatoes are already the size of softballs. Steak, mushrooms, onion, fresh red potatoes from the garden, tossed salad, and puffed wheat squares. I think green grapes will also be on the menu. Trying to keep it fairly healthy. Not going to claim that the chips will stay sealed in the pantry. ;)
Leftover KFC tonight, will make some sort of potatoes to go with the chicken, leftover corn and mixed veggies.
nothing appealed so I had apple cranberry almond oatmeal and a gingersnap
it was lunch at a family place here, but it held me over till dinner and beyond. DS treated me! I had the red snapper, potatoes, steamed carrots/cauliflower/broccoli and really delicious homemade coleslaw ( oil and vinegar way ) he had the house special all day BIG breakfast!
I have leftover potatoes. So I'm going to fry up bologna, potatoes and onions for supper. The kids love it.
Kids aren't home so I'm going to make a pot of orange lentil soup. They complain when we eat too many lentils (LOL) so I like to get a lentil fix when they aren't going to be home. hehe
I used Tupperware stack cooker yesterday. Baked apples on top, Swedish meat balls in the centre, and steamed broccoli on bottom. Apples were great, meat balls okay, but broccoli didn't cook well at all. I have to experiment more with this one.
Had one of those donair kits from walmart again. I'm sure you can fins them other places though not just walmart lol. There are no donair places around here and these kits are actually pretty tasty for $6.99 makes 4 donairs. It had donair meat, 4 pitas and sauce and you add whatever else you want to it. I added chopped tomatoes and grated carrots.
A yogurt, again had a super late lunch so was not hungry so just had a yogurt.
DH decided he wanted soup........it has to be homemade though, so dug out a frozen turkey breast and searched for suitable veg to accompany the pot. Mmmmm it is just simmering nicely now, we should be eating at around 10:30 or so......lol!!!
^ should have done what I did - I wanted soup, so chicken noodle from packages (Mama brand, never tried before, not bad - didn't use the chili packets, though).
Then I had two cinnamon doughnuts, and a cucumber sandwich.
Husband had a huge salami and cheese sandwich, leftover chicken pieces and hashbrowns.

Due to popular demand.
Quinoa/Kale Patties
10 to 12 patties
1/2 cup finely chopped onion
1 cup finely choppe kale
3 cloves minced garlic
1 tbsp olive oil
2 cups cooked quinoa
3 eggs, whisked
1/2 cup grated Parmesan
2/3 cup breadcrumbs
1/2 tsp sea salt
Pepper to taste
2-3 tsp. olive oil - remaining amount
Chop onion, kale (discarding tough stems), and garlic. Saute in 1 tbsp olive oil over medium heat until soft.
In a bowl, mix quinoa, eggs, cheese, bread crumbs, salt and pepper with saute vegetables. Mix well and let stand for 5 minutes.
Heat remaining oil. I find a cast iron pan works best. Form patties with wet hands to preventing sticking. Cook over medium heat until browned on both sides.
I vary it by sometimes adding feta or fresh mint.
Walkonby sound like when we had thanksgiving dinner at like 9.30pm because someone somehow turned the oven down and no one noticed. We started with 30 people for dinner and by the time we ate we were down to about 9 people lol.
Hurray! I was hoping you would post it!!! Thank you!!
Tonight we are going to East Side Marios as a treat. It's kids eat free night AND we have a gift card DH got for his birthday.
I already know I'm gonna have the sausage and pepper penne. Mmmmmm. Can't wait!!!! The fact that it will practically be a free meal makes it feel even tastier already!!!
I'm making a pot roast today. The weather is so odd & I think that Mother Nature is playing tricks on us.
A special thank you to French Lady for sharing her Quinoa/Kale Patties with us. I am looking forward to trying them.
MY dh loves potroast with a side order of Yorkshire Pudding. If he gets some of the things he has been promising to do done, I will surprise him with some Yorkies.
Attachment 252425 just made a quick taco salad since I just cooked the meat for the freezer for future quick taco nights for the kids. Used up the last of the romaine that was going to hit the garbage if not used today. Was good! Hit the spot
well, what a great freakin' weekend!!!
