Oh Angela I am still kind of new to it but they all love it here. I spray the cookie sheet with Pam liberally, sprinkle lots of seasonings right on top of the oil ( I use pepper, paprika, garlic and onion powder, celery seed, coriander and parsley) Then I slice a whole cauliflower into thick " steaks " . I cut it in a standing up holding the core on the bottom. Then the thickest slices stay together, but lots of bits fall away, that is fine, I waste nothing.
The outside green leafy stuff I trim away AFTER I have cut the steaks slices. I find it easier that way
Then lay the steaks and bits on the pan, repeat with a light spray of Pam on top, repeat seasonings on top. Roast at 400 degrees for about 20 minutes , then flip over and another 20 minutes.
I like most of my pieces to be dark and crispy...but because the steaks are cut thick like you still have a moist centre.
