I had shepherds pie. Was still a bit hungry afterwards so had some cheddar sunchips.
We went out for Chinese food tonight. There are lots of leftovers in the fridge.
I'm making breaded cutlets, potatoes, broccoli, and pasta with creamy pesto sauce. I buy minute steaks (aka tenderized hip steak) then do the flour, egg, panko dip and fry them in just enough oil to cover the bottom of the pan. Delicious and cost friendly. The sauce is just Classico sun-dried pesto and cream, something a really nice Walmart employee told me to try.
M&M meats lasagna - bought it for $7.99 for a 4lb tray. Will make toasts with boursin cheese for side.

Last night was Baked Potato Soup and tonight will be the same, made a batch on Sunday to have this week. Nice warm dinner on this yucky days and quick as well as all I have to do is heat it up.
Thinking it is time to start batch cooking again so most night I just have to heat up dinner, between work and now snow clean up my time at night is becoming limited.
I rescued a ham bone, with lots of meat on it, etc from a recent family gathering (and froze it) so found this slow cooker recipe:
3 cups chopped parsnips
2 cups chopped carrots
1 chopped onion
1-1/2 cups dried great northern beans
5 cups water
1-1/2 lb ham shank
2 cloves garlic, minced
2 tsp salt (optional)
1/2 tsp pepper
1/8 to 1/4 tsp hot pepper sauce (I left this out)
In a 5 qt slow cooker, place parsnips, carrots and onion. Top with beans. Add water, ham, garlic, S & P, and hot pepper sauce. Cover and cook on high for 6-7 hours or until beans are tender.
Remove meat/bones when cool enough to handle , cut meat into bite-size pieces (or shred) and return to slow cooker, heat through.
I put this on earlier this morning and the aroma is wonderful!! If it tastes as good as it smells its going to be delicious!
Potato soup in my crockpot today. Yum, good for a cold day!
It is a great crockpot day. I'm making tomato barley soup seasoned with cumin. It smells good & it is starting to look good too. I'll make some tea biscuits & dh can make a salad.
Beef stew on the stove cooking-smeels good here too!

Husband has a meeting tonight, and doesn't like to eat much before, so he'll have leftover spaghetti and meat sauce.
I had a sandwich at 3:30, so won't eat anything til mid-evening - there should be some spaghetti left, though probably no sauce.

I'll be turning 4-6 skinless boneless chicken breasts into Chicken Parmesan later tonight. ( I want it piping hot for when the guys get in ) maybe a small batch of GF pasta on the side.
I have few natural selection oven roasted chicken slices....how can I use these....? Planning to use these for dinner...any suggestions...tia

Home made hamburgers with home made "healthy" bannock with a glass of milk. I know we didn't have any veggies with it, but I guess we will snack on some fruit later. LO likes the bannock.
Husband ended up eating all the leftovers, so now that I feel like eating, I put a Dr. Oetker Panabello Canadian pizza in the oven. Hopefully it goes down okay, it smells awesome.
Added - lol, that didn't take long to wolf down three slices.
Gosh I LOVE the crust - it's absolutely amazeballs!
A bit spicy though - not sure if the sauce or meat.
I wanted chinese but hubby was not up to it so he made egg salad sandwiches for himself and I had egg fried rice.
Chilly outside today. I am throwing two chickens in the oven and boiling some potatoes later. :)
I have steak thawing but doubt if the weather will be good enough to BBQ outside (too windy) so will prob sear it on top of the stove and finish it in the oven, will throw some chopped onions & mushrooms in the pan, baked potato with butter & sour cream, homemade baked beans that my grandmother sent in yesterday, and I made some cornbread muffins yesterday that are delicious (especially when nuked for 10 secs and dabbed with butter)

I had some turkey thighs from Gateway, so I made some Braised turkey thighs and mashed potatoes.
Oooo, you can handle the heat of those wings, I can't. We had the jumbo crispy ones today. I made roasted potato wedges; I had a salad, husband had raw cauliflower florets.
Bannock is awesome - hopefully Angela can share her recipe.
It's a biscuit-type flatbread.
I made a hash with caramalized shallots,leeks and garlic and roasted corn and I threw in some Danish meatballs.
Picking up Chinese food on the way home from work today. :)

(Usually when I ask our son over for supper, I don't tell him ahead of time what I'm making. However, since this is a Friday night, I did tell him last night - so it WOULD influence his decision to say yes, lol!)
Wishing I was having take-out....instead, I have a plump chicken roasting in the oven....still trying to decide what to have with it...corn on the cobb for sure..and either mashed potatoes, stove top and gravy..or I might make potato wedges tossed with zesty Italian & shake-n-bake crispy chicken coating baked in the oven....
Found a bag of Cremini Mushrooms on the clearance rack last night must be at least 3 packs of mushrooms worth, so tonight is Steak and Mushrooms in Gravy over either mashed potatoes or noodles will see what Mom wants once I get home. Pretty sure it will be mashed potatoes as I am pretty sure we are out of egg noddles which is what she prefers it over.
