For lunch I made vegan onion rings. While of course they aren't diet or anything because of the oil they don't use much oil. The recipe is in my blog and they are very easy to make. The only reason I say go to my blog is because I'm to lazy to copy and paste the recipe here(and why would I its all right there already, lol)

I sliced them way too thin and some were like shoestring onions lol but the taste was right on. Next time I need to slice them thicker. I really like them though, I'll post the pic here from my blog in one min.

Am I allowed to say wow about my own cooking? This turned out SO yummy! After eight hours on low, the potatoes weren't soft enough, so I put it on high for another half hour, and it was great.
Milan loved it and said I had better make it again, so to mark that recipe in the cookbook. Uh, no cookbook, but I will write it out for myself so I don't forget what I did!
Taffy licked our dishes clean, and enjoyed the fatty bits I don't eat, lol!

I sauteed some onion, added the chopped up leftover vegetarian meatloaf, and tossed in some jarred spaghetti sauce - the nice chunky kind. Used up the leftover peas, kidney beans and rice on the side. I added a salad to my plate; dh added jalapeno chips to his.
