I've eaten so badly these past couple+ weeks being at the hospital. No shortage of food but lots of take-out and Timmies (thank god for Tim's!!) (my elliptical will be busy!!! ) I think I'm going home tomorrow, Dad is still in ICU but doing well enough that I feel that I can go home for awhile(but must say I feel a lil'guilty) but need the break. So looking forward to getting back to regular meals & cooking!! There will still be 4 siblings to help my Dad so he won't be alone .
Ribs - had boiled them yesterday for soup, today put them in a roaster with my mom's recipe for sauce (tomato based, onions, garlic, lotsa other ingredients!); had with scooby doo pasta (son's choice of shape) that I mixed with sauteed mushrooms, carrots, and cauliflower.
Yum and yum. The men were full and happy, too!
Happy to hear your dad is getting better KelJo. Take a well deserverd break.
DH and I joined forces yesterday afternoon and a very large pot of delicious soup was born. The base was mostly courtesy of cartons of Campbells No salt added broth and a can of diced tomatoes, diced onion, plenty of chopped celery hearts and leaves, then some of my dehydrated veggies ( carrot coins, bell peppers, green beans, basil and cilantro that I had done for the first time in early fall with the dehydrator ) As it simmered and got better smelling, near the end DH tossed in a bit of rice. near it's cooking end time I made up a batch of dumplings and in they went. One big bowl was so satisfying and filling for a meal!.
Comfort food to get him through this cold snap coming on Tuesday.
Saturday ended up being Pork Tenderloin with Potato Stuffing (Only kind of stuffing I eat) with candied Acorn Squash
Sunday was Steak Sandwiches with Mushrooms & Onions with Roasted Potatoes
Tonight will be French Onion Soup I made yesterday just need to reheat, make some croutons for the top and add some cheese
Oven meal today-Roast chicken, baked potatoes, veggies and rice pudding.
Lizzie, I am very envious of your rice pudding!!I am the only one who likes it in this house. The only time I make it is when my neighbors daughter is under the weather(she has cerebral palsy) and she loves it too!
I'm FINALLY home!!!! It was hard leaving today, dad is in good hands but has a long road to recovery...so what's for dinner?? Delissio pizza...lol...will start cooking tomorrow ! ;)
Soup - broth from boiled ribs - full of barley, rice, onions, celery, carrots, peas, green beans, corn, potatoes, dill.... full fat (I don't skim!), so yummy!
Just heating up leftover KFC which we'll have just with bread - for 'dessert', as my husband says, lol!

I have to go out at some point over the next couple of days and pick-up some fresh foods, etc...but I have enough frozen/pantry things to get by...this evening I'm going to make a beef stir-fry, use frozen veggies..(I think the onions are still good..lol) and serve over white rice...
I just finished a large bowl of turkey veg soup that I made from the leftover spatchcocked turkey :)

Tonight is a bit of this and that dinner. Will be digging in the freezer/cleaning out the fridge and see what I find. And then once the kitchen is cleaned I will be prepping tomorrow nights dinner (chicken/veggies/ rice/potatoes/salad etc)

Oh, we're full - wonton soup, honey garlic pork, BBQ pork chop suey and chow mein (their BBQ pork is fab which is why I order it with both dishes, they are very generous with it - if it were just me, I wouldn't need another meat dish), DF shrimp, and plain steamed rice for me. Husband doesn't eat veggies, so he just eats the noodles.
He did have the soup today, just because I told him it was unusual that it was spicy today - never had wonton soup spicy before. Today both the soup and the veg/noodle dishes today seemed to have more ginger (I think?) - can using more of that make something spicier? (in case anyone knows...)
Bummer, though, not enough left for supper tomorrow (that's usually the goal with ordering Chinese), so we'll have to figure out something then.

I think fresh ginger can give things a bite or make them taste spicy.
Having some ham and mashed potatoes tonight. Making some tea biscuits now to take the chill out of the house.
Last night I cooked some chicken thighs for tonight, kind of winged it. Marinated them in soy sauce, ketchup, garlic, onion flakes, worchestershire sauce, maybe other things, I don't remember. :) Seems tasty from taking a wee taste.

we will be having chicken thighs as well but for way later after the guys are home from their shifts. Thinking of using the 1 lonely packet I have of Mama Sita BBQ coating and then baking them......spuds and 3 veggies as sides.
