ate the contents of my doggy bagged dinner brought home from Kelseys. Soooo yummy. DD did up some perogies and a Tourtiere, and DH made a pasta for them. I am keeping my yap zipped, BUT there are lots of veggies available for them to eat, but no one made any??
Change of plans, Chicken Lasagna did not happen last night so instead I ate the last of the Potato Soup I made on the weekend.
Tonight will now be the Chicken Lasagna maybe, really not feeling that for tonight so might see if I can talk into something else, only time will tell.
Making some chicken wraps with bacon, lettuce and tomato.
Our local Co-op has a meal deal of a whole BBQ chicken plus a family sized salad for $10 so that is my dinner plan!

Roast beef, mashed potatoes, mix veg and beets.

Son came over for supper, so I made crunchy baked chicken pieces, potato wedges, and a salad with every veg I could find.
About halfway through the baking, I smelled something burning, went to the oven and just opened the door and the smoke detector went off - my son was there so he shut it (it went on twice more), opened the doors, put on a fan.
Couldn't figure out why something was burning - just 10 minutes earlier the potatoes were nowhere near browning to be ready to be turned.
THEN I looked at the oven temp, it was set just before broil so at 500+ degrees!
My husband had cleared some things off the stovetop when he had checked the potatoes, and must have hit the control!
So not many wedges were blackened badly enough to be thrown away, just let the others cook a bit more on the other side - so all was well. The chicken was fine, just nicely browned!
Aw. ^^ That's the way I would like my chicken though.

On my own for dinner tonight so it is up in the air, we have leftover chicken lasagna but not really feeling that, know there are couple sausage in the freezer I could cook up, but again not sure I want that. Maybe just a pita pizza something quick and simple. Guess we will see what happens when I get off work and just how much effort I put into dinner.

beef liver with fried onions, gravy, mashed potatoes and carmalized carrots. Dessert will be whats left of the apple cinnamon pie i made this morning.
It's been a long week, hopefully I can get pampered for dinner.

Chix. Lasagna, Garlic toast and Mixed vegetables. Lemon Pie for dessert....Yum...yum :)

I'm having trouble getting creative with Lenten meals at least two nights a week!
I made homemade tomato sauce with lots of onions and mushrooms, had it with rotini.
Going to have some chicken legs with rice and veggies.
Will be trying the PC Quinoa Chicken breasts tonight with stir fry veggies and rice.

Our St Patrick's Day festivities start today, Irish all the way!! There will be so much food incl the fav's Irish Stew, green beer, Corned Beef & Cabbage, green beer, roasted meats, green beer, salads, green beer and every kind of appetizer that you can imagine..did I mention the beer? lol...all the cabins are in full swing....see you on Wednesday :wave2:
I am thinking a full Roast Beef Dinner, so Roast Beef, Mashed Potatoes, Roasted Cauliflower, Gravy and I might even get creative and make something for dessert. So a traditional Sunday Dinner on Saturday as Mom is working tomorrow night and than I am off for a week of hotel living for work.
