Last night was salmon (Highliner pan sear selects) - I did it in the oven, it was very good. Son said he much preferred me buying plain salmon because he likes the way I season it and make it!
Served with rice and mixed veggies; salad with garlic vinaigrette.

Nothing compares to how Mama makes it
Tonight will be the Olivieri pasta and salad we were going to have last night. My parents called last minute and invited us over for baked chicken with homemade shake n bake, baked potatoes and corn on the cob. AND, my Mom made chocolate chip zucchini cake - YUM! We never have dessert in our house so it's such a treat when we go to my parents.

I came here for some inspiration and it worked! (thanks Natalka ) I almost forgot about the vacuum-sealed salmon in the freezer, buried under the V8 steamers, Olymel, and Gardein products. Pre-couponing my freezer was pretty much empty, but not anymore
So I'm going to make potato crusted salmon. It works great with McCain shredded potatoes. Will serve it with hollandaise sauce and green beans.

More of the same, DS and & DH got the Food Basics sale eye of round roast with awesome browned taters. DD and I had a choice of the pre made portions I did up Sunday of lemon chicken or turkey stew. ( DD and I are the losers....of weight that is. lol)

Whatever my stomach can handle. Had a bad case of the stomach flu last night, so had to take the day off work today. Got checked out and baby is doing fine. Been having little snacks, but still not feeling great. Chicken noodle soup, crackers, gingerale, banana and peanutbutter on a white bun. As long as it stays down it's not too bad.

hmmm....wish I had the time most days to conjure up these great meals I'm reading about! Last night was peanut butter on a bagel after working until 7pm...hopefully tonight will bring something better...I do have a roast out to cook tomorrow !! I also hit the METRO B1g1 sale a while back so that's on the menu for tomorrow & the next day....with mashed pototes & asparagus! Great season for asparagus now! Plus, If I can manage a strawberry shortcake we'll take advantage of the seasonal fruits starting to come off!
