Not sure what time husband will be home - he's off fixing our van - so I decided to do an all-in-a-roaster meal which keeps well: roasted chicken pieces, potatoes, carrots, onions.
A normal person cannot eat a whole egg McMuffin.
I've tried. It's not possible

I'm making garlicky ribs, mashed potatoes, mixed veggies, salad.
We arent celebrating this Easter but we will be celebrating Ukrainian Easter next week. So tonight for dinner will be whatever you can find in the fridge or freezer.
Leftovers
Going to my DD, She's having Rice stuffed Cornish Hens, mashed potatoes, Brussels Sprouts and Carrots.
Ham and broccoli quiche. Side salad.
We didn't end up having our roast beef yesterday, so we are doing it today. It is actually in the oven. Family circumstances are making this a very quiet Easter. Trying to think of something for dessert. Maybe Mini Apple Crisps?

Turkey with gravy, chorizo stuffing, cranberry sauce, mashed potato, glazed carrots and green peas. For dessert, pumpkin pie with coconut whipped cream and chocolate ice cream.
NOTHING! :) We went away for the weekend to White Point Beach Resort, and had Easter Brunch there. It was very tasty, but we were still too stuffed to eat after getting home. DS was the only one sensible enough not to stuff himself and had salmon and salad for supper.
I ate so much food on the weekend..lol...shocking, but it was all soooo good...this evening I'm going to make pizza using ground chicken, mushrooms, orange & red bell pepper & pineapple :)

Last night we had Easter dinner at my Dad, we do not tend to have the traditional Canadian dishes instead we had:

Potatoes
Potato Dumplings
Red Cabbage
Broccoli
Three Bean Salad
Shrimp (for my vegetarian Opa who eats Fish)
Shocking I actually know what tonight's dinner will be. Tonight I will be having Pot Roast Stew with Mashed Potatoes and some Roasted veggies.
There's so much food in the fridge still that I believe we'll be having leftovers again.
Tonight is fend for yourself night, We ate so much on the weekend something light would be nice. Probably get into treats later tonight.

I am making chicken fried rice.
I took home some of the leftover turkey yesterday at my parents and I'm going to make an easy pot pie with carrots, celery and onion.
One negative thing about going away for the Easter weekend; no leftovers! Tonight I made chicken wings in the oven, marinated in lemon juice, garlic, onion flakes, Worcestershire sauce, soy sauce, pepper. DH has an upset belly from overindulging on the weekend, so I made a chicken soup for him.
Turkey, mash, gravy, corn, turnip, stuffing. Yummy :)

Husband brought home supper from 7-11 - one quite far away from us, downtown, has way better food and selections than the ones closest to us. So I had honey garlic wings, their amazing coated fries, and gravy. Husband had wings, some chicken pieces, and fries.
For two bucks, you get a huge bag of fries - like the equivalent of a regular brown lunchbag about 3/4 full just for comparison. Some are crispy, some are softer - but all have this yummy coating on them, they are just SO good!
Well, I'm full.
Going to make some pancakes and sausage for supper tonight.
made 2 big pizzas yesterday and they were delicious
