Does anyone have any experience cooking with ground flax seed?? I tried as an experiment to use it in a meatloaf...2 lbs ground beef and all the other regular ingredients for a meatloaf, however, the recipe called for 1/2 cup of ground flax seed..and the meatloaf tasted HORRIBLE...really medicinal tasting (no I didn't add any of my cough syrup!! lol) Is that the normal taste baking ground flax seed or was a 1/2 cup too much???...seemed like a lot so wondering if it was a mistake..any feedback would be welcome!?!
*I had someone else try it too as I thought maybe my cold messed up my tasters but they agreed that it was yucky!!
I cook with flax seeds quite often (usually as an egg replacer). I find that golden flax seeds are milder in taste, but if your flax, regardless of colour have gone rancid, then it'll taste horrible. I store mine in the freezer to prolong their shelf life. They go bad quickly after they've been ground! :-)
