Roast beef with all the trimmings and a cold beer.
Kids had already eaten last night ( crazy, everyone is on a difference sleep/eat pattern ) so DH and I made fettuccine Alfredo ( using Ziggy's fresh pasta and Classico jars of 3 cheese sauces ) We sauteed a whack of sweet and green onions, added skinless boneless chicken chunks and frozen green peas. Steamed up probably the last pickings of green beans from the backyard and cooked a few carrots to go with. It totally hit the spot. A quiet dinner for two and we each had a Bud light Apple beer! That was different.
Not sure but looking at my veggie crisper I think a chicken-vegetable stir fry would be a good idea.
Tonight will be burgers and chips, way too hot to cook and looks like rain is coming in so BBQ is not an option. Not really my first choice but due to weather we will make it work.
Taco salad!
No clue. I have a screaming headache today :( . It's on the cooler side today so it should be something g warm and comforting but it all depends on what's up with the kitchen. My parents are doing a full kitchen renovation and the cabinets are supposed to be arriving g today so I'll have to see what shape the kitchen will be in around dinner time ;)
I'm hoping to make marinated pork kabobs with celery, zucchini, and potatoes with a big glass of milk.
Slow cooker pierogie & sausage dish
Oh you just made my tummy growl....that sounds so good!
I just got back from a long weekend camping trip late last night and packed enough food for a week , so I have lots of extras. It might be breakfast for dinner or tacos. I am gonna miss the taste of a charcoal grill though.
Cross rib roast in the slow cooker with carrots, mushroom, onions and potatoes. I started it this morning and it's done and smells O so delicious.
...lots of chicken left over from yesterday so I made a rotini pasta with tomato sauce and added onions, mushrooms, spinach , some of the shredded chicken, chopped black olives, S&P, red pepper flakes, garlic, ..and trying to use some cheese in the fridge, so added parm. some feta and crumbled blue cheese...WOW!! it was good! :-)
DH put some eggrolls in the oven...
Husband had an urge for KFC - and when he expresses a desire, I make sure he gets it, so he went to get it, lol! (I wanted McD's, but didn't tell him that - there's always another time)
Whatever helps him hopefully gain some weight, or at least maintain it.
leftovers..
Chicken enchiladas and a side of Santa Fe beans and rice.
LC chicken and veggies
Homemade Veal Parmesan, Rigatoni in tomato sauce, Fresh buns and a tossed salad. Yummy.
Homemade mac and cheese, broccoli and sunrise muffins for those who want dessert.
Thanks to Angela's post a while back, got some double smoked smokies from Co-op (SO GOOD!), baked them in the oven for a bit. Had with sauteed onions and cabbage - had added garlic, vinegar and lemon juice - and mixed in diced hashbrowns that I had just previously fried up, as well as leftover shell pasta - so is that a hash, then?
Whatever it was called, sure was delish eaten together!
I had some leftover homemade chicken soup and DH had whopper Wednesday. I had a new client today and it was a doozie of a job and then I had an online seminar literally 10 min after I got home so that meant a quick bite and a super fast shower to freshen up ;)
Last night I fried up some leftover roasted potatoes and made a Salad with Romaine, Cucumber, Cherry Tomatoes and since I need some protein in my meal I added some Bacon Bits and Cheddar Cheese and topped with Ranch Dressing. Not your average dinner but worked for a night alone.
Tonight I think I will make myself some pasta, I have a serious craving going so thinking a meat sauce with whatever Pasta Sauce I can get to in the stockpile room (being used as temp storage as we re organize our basement and shelves are completely blocked) and whatever I find in the fridge for veggies over whatever pasta I can get too (again stuck on the shelves in the stockpile room). Good news is ground beef if in stand up freezer as the chest freezer is somewhere under a pile in the stockpile room. Oh how I want my house back.
I had KD, weiners with Cheeze Whiz and frozen peas mixed in to make it "gourmet" (bawhahaha) . It was exactly what I was craving for the last few days and got the weiners for 99c and the KD foor 54c so was a cheap dinner with leftovers for lunch today! We call these affectionately "welfare meals" because we had it a lot growing up, but sometimes you just got to revisit a classic.
Tonight may be tacos or a nice juicy looking Angus sirloin steak with the yummy sides. My fridge is actually stocked for a change after doing a lot of travelling over the summer - its nice to have options!
made samosa last nite - was gonna try making my own dough but got lazy so i used butter puff pastry instead. I used it before and it turned out great - quick and easy. Still has a lot of samosa stuffing leftover. Maybe turn it into a curry soup. Hmmm
Roast pork (bones in, We think it taste a whole lot better), mashed potatoes and green beans from our garden.
I'm thinking of treating my youngest to DQ chicken strip basket. His brother is off with friends and they will be eating out so we should too!
...yesterday I stuffed 2 pork tenderloins, got them on sale for $3.00-$4.00 ea (cut through the center, open like a book and pound the meat flat) I used bread crumbs, a mixture of sauteed mushrooms, garlic, onion & spices, spinach and feta cheese..tied with kitchen twine seared in a fry pan and baked in the oven for about an hour...I made a sauce that was okay..onions, mushrooms & apple chopped really small, cream of mushroom soup, thyme,, etc...needless to say there was lots of leftovers for today...with it I had mashed potatoes that went good with the sauce :)
I had some steak with onions and green/red peppers and some rice.
fresh salad with red peppers, greens and kumato
freind trout with sauteed oyster mushrooms and garlic.
Mr. Noodles chicken flavour, sandwiches with summer sausage and cheese for husband, just soda crackers for me.
leftover enchiladas
