    This morning I'm going to use the sandwich press on my big boss grill. I'll make a peanut butter/banana sandwich, too bad I don't have bacon lol.

    I don't know about tonight just yet but I think maybe egg salad on a bagel. wooo living big over here...

    I made chicken cordon bleu, couscous and veggies.

    Yesterday I baked cheesecake. It took a long time to mix it up because that is when baby decided to start fussing.

    This thing has 6 different sets of plates to put in the machine. Omelette, donut, grill, sandwich, etc..

    Pumpkin Quiche with Bacon & Asparagus

    Unbaked Single Pie Crust
    4 slices bacon
    1 small onion, chopped
    2 cloves garlic, minced
    1/2 cup chopped asparagus
    1 cup cooked, mashed pumpkin
    1 cup heavy cream
    4 eggs, lightly beaten
    1 cup shredded Swiss cheese
    1/2 cup shredded Parmesan cheese
    1/2 tsp salt
    1/4 tsp pepper

    Preheat oven to 425°F.
    Chop bacon and cook until crisp.Remove from pan. Drain grease, reserving 1 TBLS of the drippings in the pan.Sauté onion and garlic until softened, but not browned. Remove from heat. Stir in chopped asparagus. Cool slightly.
    Mix mashed pumpkin and cream well (an immersion blender works great). Mix in eggs, cheeses, salt and pepper. Stir in cooled bacon/vegetable mixture.
    Pour into unbaked pie crust. Bake at 425°F for 15 minutes. Reduce heat to 350°F and bake for an additional 30 minutes, or until set. Cover edges of crust with foil if it is browning too quickly. Let rest 15 minutes before serving.

    had a bowl of soup after work today that DH made on Wednesday. By golly, I was pleasantly surprised, it was scrumptious...and I don't throw that word around in his direction too often. He even made it salt free too so DD and I could have some.
