Last night was the last of the yummy lentil soup and tonight dh wants waffles so waffles it is :) . He's been busting his butt caring for me and working 6 days a week. I think he deserves it :)

Going to Swiss Chalet tonight. I'm going to have the messy chicken and DH will probably have the double chicken leg.
I had a turkey sub from Subway tonight.
I had leftovers- mashed potatoes, a bacon wrapped slice of BBQ pork tenderloin and some snap peas.

The neighbour brought me a cooked caribou steak...it's a rather unusual colour, sort of purplely-brown like blood pudding. Hmmm. I hope the hunger strikes me. Curious, interested, but cautious.
^ sounds like it might be under-done. I've never seen it that color. We have a lot of caribou here. I just can't eat it, although I love beef! lol Keep us posted lol
Yesterday evening I bbq'd chicken in the oven, crispy skin, hickory BBQ sauce and roasted potatoes (rice would have been better) and made my mango salsa that I love so much (usually I make it with pork)
I would love to have an Oscar party this evening but they don't start here until 10:00 pm! so maybe something lite for dinner and nachos & beer later :)
the gang has many dishes to choose from for the next few days. Did a large cook-a -thon today and made 3 extra lg bread loaf pans of lasagna, one 9x12 Magic Chicken Pie ( http://bakeatmidnite.com/magic-chicken-pie/ ) , a pan of roasted potato and sausage bake, 2 x 9" tomato pies and thawed out the leftover turkey rice soup from the freezer. I get time off now for good behavior.....

Tonight's supper was roast ham, three cheese Chemo perogies, boiled peas, sour cream, cranberry sauce, and a glass of milk. I turned some of the peas into baby food.

Pizza with Cauliflower Crust (gluten free and low carb)--yum! DH gave me 10 out 10 for this. It's a keeper (and so is he.)

Yesterday, I wanted to come up with something different to do with pork chops - so google helped me out. I had 1/2 can of cranberry sauce, so was interested in what I could find. So I took a leap of faith, and I'm so glad I did - there were tons of similar recipes to the one I used, though I would have never done this combo because it seems so odd, but it tasted amazing!
I mixed the 1/2 can whole cranberry sauce with 1/2 cup French dressing and I package onion soup mix. Slathered over the pork chops and marinated them for the day in the fridge. Baked at 350 degrees for an hour.
I baked rice, added some soy sauce, and later mixed in a sauteed mixture of onions, celery, and carrots. It worked great to have the sauce from the pork chops over - again, such an odd combo but it tasted kinda Asian-y?
The recipe said it was good for chicken or chops.
Had a big lunch late yesterday so dinner was peanut butter and jam on a tortilla
Tonight will either be Perogie Bake or Taco Bake, it is going to be a long day so looking for something quick in the oven and ready to go.
Tonight's plan is meatballs (already cooked & in the freezer) in a mushroom sauce, with speghettini, veggies, and a glass of milk.
Natalka-we were at my SIL's for dinner last night and she made a pork roast with a glaze of leftover cranberry sauce/red pepper jelly-it was lovely.
Well the caribou was indeed fully cooked, dry heat, very lean, lean, lean and dry. Surprisingly beefy and only a faint floral hint of gaminess, if you could call it that. Reminded me of eye or round (though I don't know what part of the caribou I was eating, the flesh was finely knit like that). I wasn't sure what to expect so it was a relief that it tasted so familiar, but dry as the desert.
Tonight is discount feast: sirloin tri-tip roast $3.99/lb Zehrs, asparagus $1.99/lb Freshco, potatoes $2.00/10 lb Freshco, and I will make some carrot/turnip/peas/something to round things out and have enough vegetables to support the leftovers, and gravy.
Dw is making meat loaf with mashed potatoes and cauliflower.

lecale, I've never had caribou, but we were given some elk a while back - I made a stew which I roasted for hours slowly in the oven - it wasn't gamey at all, very flavourful with more depth than beef.
Tonight, I didn't really feel like eating - I got hurt earlier in the day by 'almost' falling (I'm okay, but muscles are angry), but I had to put together something easy for me so husband could eat - sauteed onions with ham sausage, leftover pasta with mushroom sauce, beans in tomato sauce.
But I had to eat something - and I always hear about people having beans on toast, so I had that. Well, not something I'd have again, I don't get it...
I just baked half a tray of cheddar garlic biscuits and I have to say, they are even better than Red Lobster. And I love Red Lobster's biscuits. I ate three of them already, oops...
So for dinner it's those yummy biscuits and some oven "fried" chicken wings.
