Hashbrown casserole.
We had our traditional snacky type appetizer supper -
layered spread/dip
assortment of crackers and tortilla chips
shrimp and sauce
quiche tarts
ham
garlic sausage
antipasto (homemade - SO good! Glad it turned out so well)
green pepper jelly (made by my oldest sister, it is very good - an unusual taste at first because it's sweet and savoury, but so yummy. A little spicy, not too much)

Roasted Capon with stuffing, Prime rib of beef, roast potatoes, Brussell sprouts. candied parsnips, green beans, Yorkshire pudding and both gravies. Rum cake, pumpkin pie and whipped cream for dessert, it sure was a great feast.
I made medium rare roast beef for the first time ever. I actually prepared it right, I was surprised.
Mr P doesn't like beef and I wanted to cook something simple..
Trout fillets, Basmati rice and green beans. Blueberry pie with whipped cream for dessert.

A large piece of home made Carrot Cake with Double Cream Cheese Icing for breakfast.....Yum...Yum...............Yum...Yum. LOL.
Just made a big pan of Fried Potatoes with Bacon and Onions and Bulls Eyes for everyone. ( My Dad used to cook Bulls Eyes for the kids when we were younger. Mom always cooked the meals but my Dad would make us this for a treat.....I felt like it today as my thoughts drifted back to my Dad while watching a Christmas movie and the father was cooking breakfast :) My Dad would butter Rye bread and then cut out a hole in the middle of the bread and remove it. He would put the bread in a buttered frying pan and then break an egg into the middle. He would fry the middle piece taken out of the bread in the frying pan as well. He would flip the bread egg over and get it crisp but not hard. He liked the yolk just set. We loved them. Thanks Dad....They tasted nearly as good as I remembered. Have an amazing day everyone :)

Tonite we had leftover turkey ..so I done club sandwiches and home made French fries ,dressing and gravy .. dessert was cinnamon coffee cake and cookies

What I am calling Christmas Lasagna, a Layer Gravy a Layer of Mashed Potatoes, another Layer of Gravy a Layer of Turkey another layer of Gravy, a layer of Stuffing and another layer of gravy baked it for an hour and dinner was served
Clam chowder. I guess mom didn't want turkey leftovers. At least I'll have an easy fix for lunch tomorrow.

KFC tonight - finally don't have to cook!
We had been gone for the last 3 days while we visited my family in another city. I picked up some groceries and a rotisserie chicken from Sobeys. I had two rotisserie chicken sandwiches with a glass of milk.
I made soup.
I'm still alive.
I consider that success.
Club sandwiches sounds like yummy leftovers. Our current favourite with leftover chicken or turkey is to make up chicken quesadillas with the meat, peppers, cheese and wraps in the fry pan-served with guar, s. cream and salsa if you wish-come to think of it pico de gallo would be good too!
Going to have turkey soup with lots of veggies with fresh rolls. Rum cake for dessert.
We have a free pizza with the local pizza shop so thinking of ordering that for dinner with some wedges and boneless bites. We will see how the afternoon goes.
Swiss Chalet then a movie.

Taco salad. Had the taco meat cooked in freezer so was quick and easy to whip together. DS loved it!
I'm starting to cook from the "Depression Era Recipes" cookbook that I got for Christmas. I asked for it and a few similar cookbooks because I intend to make my food budget for 2017 s-t-r-e-t-c-h rather than increase. So tonight was "Salmon Chops".
Ingredients: 1 can salmon, 2 tsp butter, 2tsp flour, 1/2 tsp salt, dash cayenne, 1 tbsp lemon juice, 1 tsp chopped parsley, macaroni, 1 egg, bread crumbs.
Directions: Remove the skin and bones from salmon, and mash fish with a fork. Mix together butter, flour, salt and cayenne; add the fish, lemon and parsley. Chill and form into 'chops'. Dip in beaten egg and bread crumbs, put a piece of macaroni in one end for a 'bone' and fry in hot oil till brown on both sides. This is very good, but they'll know it's not pork chops.
