    DS caught what I had, so we did another big pot of homemade ( no salt, GF ) chicken soup. All the normal veg and then added savoy cabbage shredded and some white kidney beans to thicken it up some. Also sauteed up some cod and basa fillets after coating in GF bread crumbs first, with lots of lemon drizzled over. Mmmm
    We all ate in front of the tv downstairs which I hate doing, but it was cozy and comforting with soup.

    Didn't bother to take a picture of the potato roses. They definitely looked like roses, but I sprayed a bit of butter pam on the, then added a sprinkle of pink salt and paprika before I baked them. Mistake, the petal tips browned to fast. They tasted fabulous, like fries for sure, but with very crunchy edges We ate them though, and I will make them again. The recipe wasn't that clear, so live and learn. I have confidence they will turn out great next time so I will get a picture of them. Tonight's menu, I'm going to make a pulled pork, then serve it on a gluten free ciabatta bun with coleslaw and a watermelon and feta salad. Since I'll be home most of the day anyway. Pork butt down here is insanely cheap. I bought a 5 pound (approximately) roast for less that $4.00, then cut it in 3 pieces, that's less than $1.33 for 2 of us, with leftovers for the next day too!

    Tonight is Panko crusted chicken, Quinoa and Broccoli.

    If you haven't used Panko bread crumbs yet, I highly recommend. Really nice crunch. They also taste great tossed with a little butter to top a casserole. Below is how I cook chicken using panko incase anyone is interested!

    Chicken breast (pound out or split in two)

    Dip in Flour and shake off excess (seasoned with s&p)

    Then dip in Egg (seasoned with s&p, garlic powder & dijon)

    Then press into Panko (again s&p)

    Olive oil for frying at med to brown for colour but not cooked through (make sure the oil is well heated before puting your chicken in to get a nice golden brown)

    Finish cooking in the oven for 12 minutes or so at 350 (but I temp everything!)

    Finally we were all awake at the same time and opted for an earlier dinner today. Just finished eating, so stuffed! We had homemade GF/DF pancakes, scrambled eggs, honeydew, cantaloupe, we shared 2 different types of homemade Quesadillas, filled with alaskan crab meat, mushrooms, onion, cheddar...and the one the kids like with oven roasted chix breast sliced deli meat but the same otherwise.
    This time I MADE the tortillas too! GF!! I was pleased as punch with myself. They were nice and thin, it was like making a crepe, don't know how I managed to pull that off.... I'm not even French!
    Will probably not eat anything else today.....lol....I wish!.

    With added cook chicken at 50% off (only expire in 2 days) and will have leftover for sandwichs ,or with mashed patatoes.
    Will add some veggies(mushrooms,Cherries Tomatoes,Peppers )
    and snack in the evening!
    The goal is to live day by day not to much thinking hahaha !!!!
    I love to save money!!! Frugal life hahaah !!!

    It was above zero and balmy for January here today so I barbequed pork chops , did roasted acorn squash and green beans, made a pack of side kicks to go with it for the 15 year old who isn't dieting!

    Weird day for eating. Had to fast for some medical bloodwork, and ended up having ginger beef, sesame chicken, fried rice, chow mein, and sweet and sour pork at a Chinese place for lunch. Just a grapefruit for supper tonight. Hopefully, I'll eat healthier food tomorrow.

    We had crockpot slop. I take out all the leftovers, throw them in the pot, add diced tomatoes, a good helping of ketchup and if there is a 1/2 used bottle of BBQ sauce around, it gets filled with water, shaken and tossed in. I' ll throw in some peas &/or corn for color. Let it simmer for a couple of hours and serve with hot biscuits. Sounds disgusting, but it's really good, thick and filling. Better yet, CHEAP!!!!!!!!!!!!!!

    SoF has ground beef on sale and coupons for mushrooms, so I made meatloaf. I put in some onion soup mix, lots of mushrooms, an egg, a splash of milk, spices, formed a loaf and covered in bacon. For gravy I fried onions, peppers, mushrooms, then added a bit of flour, then a beef stock cube and milk. Served with mashed potatoes and salad.
