I'm making a Taco-tater tot casserole. First time trying this recipe, but sounds nice n fattening :P
-Hamburger;
-taco seasoning pkg. ;
-canned corn;
-nacho soup;
-tater tots.
Everyone enjoyed the old fashioned pot roast yesterday and I'm glad I made a lot of extra. I'm going to switch mine up a bit tonight and just have open face roast beef sandwiches.

Chicken stir fry w/ rice
..started out having a bbq...pork chops, tinfoil potato packet, sweet potato, green beans, etc...but the bbq was acting up again and wouldn't start...sigh..so everything went in the oven, added bbq sauce and pineapple to the chops ..turned out great, lots of leftovers for tomorrow :)
Club sandwich and home fries and Diet Pepsi
..leftover pork chops from yesterday, they were fat and juicy so hopefully still good today..and there's a container of tomato, meat sauce leftover from Sunday's nachos so going to toss with some rotini and lots of parm. cheese...
Want to get stuff done around the house tonight so thinking a quick dinner of eggs and toast for me and will make sausage for the rest of them. Then get to my chores!

BBQ hamburgers, homemade fries and a garden salad.
Still trying to get the hang of this cooking for one when I am at the trailer during the week.
I bought 2 fresh sausages from the butcher "Texas Hot" is what they called them.

Heat it up indirect on the BBQ while I grill the sausage and some veg.
Hard day so what could not be easier than a toasted fried egg sandwich and a grilled cheese. Will probably make two of the grilled cheese

..its a rainy day here and I'm in the mood to spend the day in the kitchen...have a lot of veggies in the fridge to use so will make some meals to put in the freezer, chili (some for nachos) chicken pot pie, cabbage rolls & beef stew..and I might make a cake, haven't decided on the kind yet but it will probably include cream cheese :)
Well the plan was to make mini meatloafs, rice/fries and veggies.
But I see wonder burg buns on sale. So will pull the cooked burger patties I have in the freezer and a bag of oven fries. Slice up cucumbers and carrots with dip. Dinner is done.
I will make the mini meatloafs and rice tonight so that can be quick heat and eat dinner tomorrow night. Much easier plan!

..yesterday was a cooking marathon! I made all of the above incl a ham & pineapple pizza that's in the freezer ready to go in the oven at anytime...the fridge & freezer is full of containers & pans of food for easy meals :) ..this evening I'm having some of the beef stew. I tried this easy chicken pot pie recipe, I didn't use a Pillsbury crust or make my own (hee hee) just used Compliments Deep Dish Pie crust as that's what I already had and just used my own veggies (sauteed first & I roasted a chicken), turned out really good

Last night I finally used up the leftover Meat Sauce I had planned to eat on Monday.
Tonight is a mystery it is supposed to be rather warm and not much in the fridge we can just heat up. Will see what inspires me when I get off work
On Monday I stuffed some lovely pork loin chops with homemade stuffing ( could not believe I had no more boxes of Stuff 'n Such in my stockpile ), adding cranberries, onion, celery and spices to it. I always crumb coat these all over the outside after they are stuffed, and flipping half way through baking makes both sides nice and crispy.
Wanted to give the guys more variety instead of taking chili into work 2 days in a row. But then again my son says....
" Mom, that is not a bad thing, I love chili! "
I didn't pull anything from the freezer to thaw. Tonight's supper plan is now Cheemo cheddar perogies, sausage, and cooked veggies.
Lazy day over here... just stuck in pizza pockets in the oven for all of us, Ha! :shade:
DH made a ham and cheese quiche.
Home alone tonight and just going to toast a few bagels that I just bought and put some of the cold meat and cheese that we already have in refrigerator
Back in Trenton tonight, so cooking for the crew.
We too had Cheemo's tonight. I defrosted them first and grilled them on the BBQ.
I also made Loaded Cauliflower (and broccoli) and went back to the butcher from more London Broil.
