    i'm gonna try making the Olive Garden's zuppa toscana soup tonite. I read some copy cat recipes online - hopefully they work

    Pot Pie ala Veggie

    I used fresh, vegetables and lightly cooked them. Then carrots, garlic, celery, zucchini, red potatoes, mushrooms, onions, and cauliflower. I sautéed the onion, garlic, celery and mushrooms until they were soft. I boiled the potatoes, cauliflower and carrots until they were just getting soft. Then I combined all the cooked vegetables with 2 cans of condensed cream of potato soup, thyme, salt & pepper and milk. This time I used frozen pie crusts & made 2 pies (one for dinner and one to freeze). Bake at 375 for 40 minutes. Make sure you cover the pie for at least part of the bake time since the crust will start to burn before you reach the full 40 minutes.

    You can also use golden mushroom soup but go very easy on the salt or better still leave it out.
