I made Italian sausages, tagliatelle pasta and a snap pea stirfry. Lemon Meringue pie for dessert. Sorry, no picture of the cut pie...it was still chilling in the fridge when I took the picture. If my family thought I was weird for taking these supper pics, don't know what they would have said if they'd seen me with my camera in the fridge!

I had left over burgers(kids had leftover chicken)with some leftover spaghetti I fried then added garlic powder, parmesan and parsley to.

Made meatloaf for supper last night, served with pasta and Caesar salad.
My mom never made meatloaf, so I didn't grow up with it. Didn't even taste any til I was an adult, and I had some of my sister's.
I've been trying different ways of making it - one totally failed and turned out all dry and crumbly. I'm getting better - last night's was def a hit!
Alas, no recipe, nor could I replicate it exactly since I used some leftovers. I started with leftover marinated veggie salad (carrots, onions, broccoli florets and stems, cauliflower) - and used the liquid too; mixed in ground beef, moistened bread, oatmeal, an egg, spices, shaped into a long flat log and topped with ketchup. Baked at 325 for about 45 min, then up to 400 to crisp it up for about 15 minutes.
Any recipes/ideas?

Mmmmm. DS said when he made a plate of Tostito chips with Free salsa and Free Habanero cheese! He ate that for lunch just now. I just got the Salsa free by chance! It was a SCOP @ NF because it scanned @ 2.97 instead of $2.88, plus I had gotten the $1.50 off for buying it with the 2 doz eggs. Win! munch Win.
Made a large and a small pan of GF lasagna early this a.m. to have for dinner tonight, and a new batch of DH's GF cornmeal muffins. The rest of the day is mine!

I have a rather unconventional meatloaf recipe. I think it was originally from Chatelaine Magazine.
Meatloaf in the Round
1 egg
1/4 cup dry bread crumbs
2/3 cup spaghetti sauce
1 lb lean ground beef
1 1/2 cups grated mozzarella (or cheddar, or a mix)
1 minced clove garlic
1 tsp dried basil
1/4 tsp oregano
1/2 tsp salt
1/4 tsp pepper
Preheat oven to 425C. Grease a 9" round casserole or pie plate.
Beat the egg, stir in bread crumbs and 1/3 c of the spaghetti sauce. Crumble in the beef. Add 1/2 cup cheese, garlic, basil, s&p. Mix it well to incorporate everything. Even pat into pie plate. Bake uncovered for 20 minutes. Drain the fat and juices and then spread top with remaining spaghetti sauce. Sprinkle with remaining cheese. Bake for another 10-15 minutes, until cheese is melted and golden.

Easy Cream of Tomato Soup
3 TBLS butter
1 onion chopped
2 -3 cloves garlic, finely chopped
1 carrot, diced
1 rib celery, diced
3 TBLS all purpose flour
1 28 oz can of plum tomatoes with juices
2 cups chicken stock
1 cup milk
½ cup of half & half cream (optional)
1/3 cup of gin
Salt & pepper
- You can also add about 6 pieces of lightly cooked bacon.
Melt butter in a large saucepan. Add onion, garlic, carrot and celery. Cook 10 minutes until tender. Stir in flour, cook for a few minutes.
Stir in tomatoes and chicken stock. Break tomatoes up with spoon. Bring to a boil, reduce heat and cook gently for 20 minutes, Add gin and simmer for 5 minutes.
Puree soup. (Hope you have a blender)
Return to heat. Stir in milk and cream (warm them up a bit to prevent curdling) Heat thoroughly. Add the cooked bacon if you desire.
Season the soup with salt and pepper. If the soup is a little too thick, you can add extra stock.
You will be surprised at how good this is & I’ve made it without the gin, but it is not the same.
I am making this soup tonight & my dh is going to ask where the bacon is. He is on a diet that does not include bacon. I was inspired by Vesper to make this again.
