Last night it was baked chicken thighs with a thyme and garlic butter tucked under the skin, a green salad, and a bagel with some cheese.

Polenta!! Why do I like it so much? I make my own every once in a blue moon, but had a store bought roll ( Aurora brand ) in the cupboards from 3 months ago maybe? I was just about to open it and slice off some and top it with tomato sauce and parmesan...then horror of horrors! I look at the nutritional label and it says for 1/2 cup ( 140 g) there is 470 mg of sodium!!
Guess it is plan B for dinner....my eggplant, veggies and squash I made yesterday. ( sigh )
