6AM the crock pot was loaded with 3 layers of ham slices, sliced potatoes, onions & graded cheese. A can of mushroom soup was placed on the top. One awesome meal after a day on the slopes!

yum so jealous! I think I would rather have that tonight but no ingredients to do so...I have the cheese and that's it LOL!
Tonight I'm making salmon fillet topped with breadcrumbs and garlic powder (it's in the oven now and smells good so hopefully this works since it was a frozen fillet that I tried to be creative with), whole wheat long grain rice, and peas.

Breakfast for dinner. My parents went to Hawaii today for two weeks so I got all their little bits of food that wouldn't be good when they get back. So eggs, boiled potatoes for hash browns, maple-flavoured beans, and toast were all free from my parents fridge. And free Maple Leaf bacon to round it out. Zero dollar dinner!

ok, that last post was just a silly thing my DS showed me. Here is what I was up to starting at 5:30 a.m. I made this stuff for the weekend and maybe Monday ahead?? Well see how long it lasts.
12 GF cornbread muffins,
12 cups cooked Basmati turned it into shrimp fried rice. ( the veg I added this time, gai lan, carrot, onion, water chestnuts, savoy cabbage, red pepper, spinach)
lightly steamed about 5 cups each broccoli, carrots to have ready as sides.
baked 3 small acorn squash
made 2 x 15 inch GF pizzas ( ugh! from scratch) with Pillars turkey low sodium pepperoni, tomatoes, fresh pineapple, red pepper, caramelized onions and mushrooms, no tomato salt paste diluted with diced tomatoes. Lots of fresh basil chopped into it and garlic. Used some of that previously shredded Mozzarella that was frozen into small bags.
Prime rib roast ( cooks itself, I take no credit), with roasted sweet potatoes, and white too.
9 x13 pan of GF brownie mix

We are hosting a potluck at our house tonight. If everyone makes it there will be 11 adults, one child & our 5 month old baby boy.
I might post tomorrow what we end up having. I bought OJ with Checkout51 rebate. Plus 2L of Coke & Fresca (2 of our guests are diabetics). I have this in the oven.
Cheese Cracker Spread
2 blocks cream cheese
1 cup mayo
1 ½ cup shredded cheddar cheese
1 can flakes of ham
4 chopped green onions
Parmesan cheese
French bread
crackers
1. In a medium sized bowl combine cream cheese, mayo, cheddar cheese, flakes of ham, and green onions with an electric mixer.
2. Cut top off French bread loaf and pull out the soft inside of the loaf. Cut up these pieces of bread and reserve for later use.
3. Fill hollowed out loaf of bread with cheese mixture and smooth out. Wrap loaf in tinfoil, leaving top exposed. Bake in 350F oven for 1 -1 1/2hrs. 5 minutes before the loaf is done cooking, sprinkle with parmesan cheese and put back in oven.
4. Serve with the pieces of bread and crackers. Don’t forget to eat the “bowl” as the dip is almost eaten.Help me out with Swagbucks and we can both earn gift cards and PayPal money

GF pizza tonight. My pizza stone split in half in the oven, it is in two pieces...I know GF dough can be dense but really...jk I know it is unrelated. It has a 3 year warranty that I will be contacting my Pampered Chef consultant about.
