    Nachos, had a huge craving for them so the chicken that was supposed to be tonight's dinner in the fridge and had Nachos and they were so good.

    I'm going to do something with chicken in my crockpot later, which is also good on nachos. Skinless chicken thighs (bone in but that's just my preference, find it adds more flavour), a can of drained black beans, about a cup of salsa. I think I add a bit of taco seasoning too? I forget. Anyhow, once it's cooked (4-6 hours later), the bones come out easily and you can shred it. I'm going to mix in a can of refried beans, a bit of shredded cheese, use it to make a kind of enchilada by rolling this mixture into tortillas, top with salsa and a bit more cheese, bake in the oven. They freeze well too before baking. We've also used this for a nacho dip.

    Last night, a big treat for us here - pork tenderloin. I just used a dry rub and roasted them - so juicy and tender. Had it with roasted potatoes, carrots, onions, garlic, and celery - yum on all the crunchy 'burned' bits we fought over!

    Tonight will be pork meatballs, Caesar salad, not sure about other sides.

    I've been on the go since 4:30 AM and wont be able to stop and rest until 6:30 at the earliest so I popped in here for some inspiration. I have ZERO ideas and ZERO energy. I can't do hot dogs since we've had them twice in the last week and I'm planning on making Asian dumplings tomorrow so I need it to be fast and easy. Any suggestions????

    bacon wrapped scallops, bruschetta and greek salad (love black olives!)..and the storms missed us so I was able to cook the scallops and the bread on the bbq

    ... My 3yo chose dinner- broiled hamburgers without the bun, baby tomatoes and cottage cheese, and green salad (all green veggies). I snuck in a piece of ice cream cake after she went to bed.

    Too hot to have the oven on, but I did it anyway. Made lasagna and a veggie stirfry on the side...I was doing the children a favour, these vegetables would normally be in the lasagna! Since I had the oven on, made brownies for dessert.

    Last night was tortiere (very good from M&M Meats, much better than Schneider's), homemade potato wedges, zucchini sticks (yum, my fave from M&M), sweetlet peas.

    Tonight will be bacon wrapped sirloin and packet potatoes done on the BBQ, big salad to go with.

    Tonight I plan on cleaning out the fridge/freezer and planning our meals from what has to be used up for the next few days so for sure there will be fries for the kids and perogies. Thinking chicken and ceaser salad as well

    Believe it or not the only canned soup I have in my stockpile is the cream of mushroom that I use for gravys/sauces. DH isn't a fan of canned soup....plus it's summer and too warm to justify soup .

    I ended up making basmati rice which I stirfried with soy sauce and added edamame beans and sweet corn. I also cooked up some ground beef in lea and perrings, hot sauce, garlic powder and some other stuff. DH loved it so did I.

    for lunch, i did the six wing classic and medditraenen pizza for $10.60

    I made soup yesterday and dumped in lots of kale from the garden.
