This afternoon we're going to a fundraiser called, "Chocolate Affaire," which is a chocolate buffet! It's only 9:30 a.m. right now, but I'm currently grilling pork tenderloin since we probably won't get home until at least 4. Might not even want supper by then, but it will be available if needed.

have made 2 x-large meat pies, sausage/potato casserole, 24 Gluten & Dairy free cheesy cornbread muffins, ( oops there are only 22 left now ), veggies to be steamed up later. juicing enough much later tonight to last 2 full days.

WOB, which 'fake' cheese do you use? I've tried only one kind of soy cheddar and it was horrid!

Because of us moving, we've just been having a variety of the cheapest takeout foods we can find... just once a day, for supper. I'm REALLY missing cooking, but it will be a few days yet before the kitchen is in any semblance of order!

Well look at me claiming dairy free on my muffins!! I used Rice Dream instead of milk, but totally forgot that I was making CHEESE muffins! I used BD Extra Old Cheddar and BD mozzarella in them. ( what a dolt!, thanks Natalka for asking, and I agree that soy stuff was kind of awful ) I was buying something called Lactose Free cheese from the Health Food place near me, but the cost of it was crazy and I don't think I ever used it in muffins, it would not be cost effective.

I still use real cheese in both cooking and baking, but plan out what I make so it's worth me taking the Lactaid tablets for...

So last night I had one of my BIL's and SIL over for dinner and since I have a TON of butter chicken leftover we are having FIL and MIL over tonight. EEEEEEEEEEEEEEEEEEEEEEEEEEK! I just realized that in the 9 years of marriage I have never cooked a meal for my MIL . Since she is the Martha Stewart of the family I have always been afraid to cook for her. I think I may just have to start drinking now at 9:30 to calm myself down lol

I made a sandwich (just lettuce and cheese... and hot sauce, lol), a salad with some veggies and sun dried tomatoes (seriously, LOVE these).. and a boiled egg. I forgot I had them in the fridge, LOL!

I love popping in this thread to get inspired for future meals... keep posting ya'll!!

Chocolate buffet was very good, but a bit too indulgent. It's like going to an all you can eat pasta buffet, you can only eat so much of this stuff at once. By the time we were done, we'd had enough chocolate for awhile! My DS's fave was the chocolate fountain, but there were many chocolatey creations.

We didn't eat much when we got home, DS had some veggies and a bagel before bed. It was kind of funny, I'd brought home a couple of Lindt chocolates, and after we'd be home awhile, DS saw them on the counter, started to reach for one...then pulled his hand back and said, "Blah!" It was just a reaction to go for a tasty chocolate, but he's as chocolated out as we are! I have no desire to eat any either.

^ I don't think Pizza Hut is offering those sides!! LOL. Not sure what to have today. I have 2 open jars of salsa to use up, so maybe I will do a chicken bake with the salsa & shredded cheese, etc..
